Tender Beef Roast

 I see that there are a lot of people that drink coffee,Did you know that you can use black coffee on your beef roast to tenderize it and also give your gravy a nice deep color and no it won't taste like coffee.I always sear my pot roast to seal in flavor and give it a nice color.Then I season it and I pour a cup of black coffee on cover the roaster and cook in the oven until almost done,then add my carrots and potatoes until they are cooked.You can serve it with the pan juices or thicken the gravy if you like either way it is so good.If you have any tips for pot roast please feel free to share your ideas.

I've never used coffee in a roast but I'll certainly give it a try.  Thanks for tip.
I use good quality canned beef broth in the pan while the roast is cooking. 
If I want very good gravy .... I buy a bunch of beef soup bones and boil them long and gently to get my own beef broth.  That's pretty expensive and time consuming so I don't do it often.

when I make my roast beef it is so tender and it falls apart.

I usually cook my roast in the crock pot.  I think cooking it all day in there makes it very tender.  I usually cover with cream of mushroom soup and dry onion soup mix before cooking.

I've been cooking my roasts in the microwave for a long time, except the prime rib roast. That has to go in the oven!!

The coffee is acidic and it tenderizes the meat.I was a girl when the Galloping Gourmet first came out Graham Kerr was the host and this was one of his tips.We have been doing this for the last forty plus years.Nancy said she uses beef broth that would be fine to even mix the broth with the coffee for extra flavor.I use soup base which is in a powder form,it does have salt in it.When the roast is done and it needs a little something I add a little of the beef soupbase to the gravy to boost the flavor.The soup base comes in a jar and it needs no refrigeration.They have beef,chicken and ham flavored,it should be near the soup and bouillion in the store.

Beef roasts have been so expensive I haven't bought one in ages.  I have bought some very nice pork loin roasts at Costco lately, and we eat a lot of chicken!!

Thanks Gale.  I will have to try that the next time I make a beef roast.   I'm sure my husband will love it since he is so enamored with beef lol.
