Hi DEBBIE B;
GRANA here;
Isn't it nice when our money saving ideas also  save time when making meals in the future( like pre-chopping pnions & freezing them!!!!
I do that whenever possible.
Recently,I cubed(1/4") some eggplant pieces&  froze them ...Today,  I  used eggplant cubes to top( switched for peperoni  slices on his pepp)roni pizza, topped each  piece  w/ a little   pre-made (frozen) pasta sauce  &  some pizza  cheese shreds( also pre made&  frozen)
I put the extra ppperoni slices on his half pizza& we each had or fave pizza w/ little extra time/effort on my part
he had dble.roni pizza & I had mellanzana ( eggplant  ).pizza
BTW, the eggplant cooked to perfection while the pizza baked @425' for 25 minutes...  It was like an open faced  eggplant parm sandwich. Wink; (less fat   sodium than the pepperoni)&  I left a few small pieces of the pepperoni fir flavor  on my half; he was delighted/ the dvbke rioni on his half 7 the few wggplant oparm pieces I scattered around iwere space allowed
