S-t-r-e-t-c-h the meat Frown.  I rarely serve a whole chicken breast. I cook the skinless, boneless breasts, cut them into bite size pieces & toss with lots of onions & bell peppers for stir fly and serve on a bed of rice; chicken or pork pieces added to onions, bell peppers, pineapple & BBQ sauce goes well with cornbread, extra taco meat  becomes nachos or a Mexican casserole, extra rice can be tossed into soup or add a little sugar & milk to eat like cereal, a little leftover tuna salad spread on celery is a good snack, make kabobs with more vegs. than meat, that little bit of leftover roast becomes a nice soup.
