I think the "secret" of a good pizza dough is to give the dough time to develop a good flavor. My husband's family used to have a pizza place and my husband was the one that made the dough. He would make the dough the day before for the next day and allow it to slow rise in the cooler over night. Sweet rolls like sticky buns and cinnamon rolls taste much better when allowed to rise overnight. Makes it easy too, make them and put in the pan you are baking them in, cover loosely and refrigerate. Remove from the refrigerator in the morning, uncover, preheat the oven and bake.

I think you are right about that over night rising and I will try will cinnamon rolls as well, my daughter was just telling me that she would like them sometime this week. :)
