One of my favorite cakes is a Pineapple Upside Down cake. I love them when the pineapple and brown sugar get really caramelized. The last one I had was made with pineapple chunks, the cake was very easy to cut through and every bite had quite a bit of pineapple. I think it had even more pineapple than when the rings are used. It was not quite so pretty but very tasty. I figured the next time I made on I would try it with the chunks as well.

I always have cans of the chunks on hand, I will have to try them on the cake next time. I only use the rings for ham, the cake & the Easter Jello filled rings. Hubby loves the cake & I am sure he will not care about the looks.
