Here's a quick recipe for a cake made in a cast iron skillet:
Pineapple Upside-Down Cake
1 pkg cake mix, white or yellow
1/2 cup butter 1 1/2 cups brown sugar
1-20 ounce can sliced pineapple, drained 10 maraschino cherries, drained
Make cake mix according to directions, using pineapple juice in place of water. Set aside.
Melt butter in cast iron skillet. Remove from heat and add brown sugar evenly. Arrange pineapple rings with cherries in the centers. Pour cake batter over pineapple and bake as directed on cake mix. Cool 10 minutes before turning out on a plate.
I haven't made this yet due to the hot weather but will soon since I love anything pineapple.
