Tried a recipe for apple pie jam and it is really good.  I'm posting it, just in case some one would like to try it.

4-5 large Golden Delicious apples, peeled and sliced
1 cup of water
5 cups sugar  - I cut this back a bit
1/2 tsp butter
1 3 oz liquid fruit pectin
11/2 tsp cinnamon
1 tsp ground nutmeg

In medium pan, combine apples and water.   Cover and cook slowly until tender.

Measure 4 1/2 cups apples and return them to the pan.  There may be some left over apples but don't add them to the pan, use them some other way.

Add sugar and butter to pan and bring to full rolling boil, stirring constantly.  Immediately stir in pectin and return to a full boil again.  Boil 1 minute, stirring constantly.

Remove from heat and skim off any foam.  Stir in spices.  Ladle into clean half-pint jars.  Leave headspace.  Wipe rims and adjust lids.

Recipe calls for 10 min boiling-water bath.  I don't do the water bath part.

Makes 7 half-pints.

This looks like a great recipe.  Thanks so much.  We have a "golden delicious" tree in our yard, and I'm always looking for ways to use the apples!

It's strawberry season in southern California and your recipe reminded me that I need to dig out my recipe for microwave strawberry jam. And thanks Bakery1, for your recipe! I love apple jelly and jam.

Bakery --- If you don't use the water bath, what do you do?
I've tried and tried but the only thing I have ever canned successfully is sweet pickles

Nancy, in over 50 years, I've never done a boiling bath for jam and I wasn't about to start now, so I just put my sealed jars on the cupboard shelf, after giving two away.  I've have yet to have a problem with jam not being good.

when we made jelly or preserves
we screwed on the lids and turned them upside down to cool      the heat of the jelly helps the seal

2 questions....
is that 1 package of pectin at 3 ounces or 13 ounces of pectin.  I am guessing it is 3 ounces just want to be sure.

Can other apples be used.  I am not a fan of Delicious apples and would like to use other varieties. Possibly a mix of Granny Smith and Honeycrisp or other combination. Any suggestions would be welcome.

Thanks for the recipe Bakery1.  I'll have to keep that for when I'm inundated with apples in the fall.  Getting tired of applesauce lol.

Nikki, you guess correctly, 3 oz.  Yesterday, I made strawberry rhubarb jam and is it good!  I like to use the homemade jams in the thumbprint cookies, just fill that well up with homemade jam, yum!

I happen to have some strawberries in the refrigerator and Jam sounds good.

By the way do you have a recipe for a red pepper jelly? I like the sweet spicy flavor of that and can use it as a glaze for chicken or pork.

Pepper jelly (to be served poured over cream cheese) is one I tried over and over and never once got a jelly-like result.  Mine was always total liquid or solid as dried jello.

OOPS...the woman that makes Divinity!
What do you think might have been the problem with the pepper jelly?  I know there is very little pectin in peppers.  Do you think it may have been a "bad batch" of pectin?
I just might have to check out All Recipes.  This may be one recipe that I have to read all the comments before making.

Nikki -- I've failed at strawberry preserves too.  I LOVE pepper jelly so I tried it over and over.
I just can't do it.

Nikki, I have made pepper jelly and it is great, but mine turned out runny.  Even the gal that gave me the recipe had that experience.  Not sure if the peppers were a problem last year or the pectin.  I think I could boil it down a bit and use it for a glaze for meats.

My friend who gave me the recipe, poured her jam back into a pan, added another box of pectin and boiled it.  She said it thickened up but I wasn't in the mood to do that when I made the jam.  I will try boiling it down to see if it gets thick enough to use as a glaze.
