I just saw this recipe on another website and it sounds so interesting that I may have to try it this week.

                              JALAPENO POPPER GRILLED CHEESE

4 OZ LOW FAT CREAM CHEESE , SOFTENED
2 TEASPOONS DRY RANCH DRESSING MIX
4 SLICES WHITE OR WHEAT BREAD
2 TABLESPOONS UNSALTED BUTTER, SOFTENED
1/2 CUP SLICED JALAPENO CHILES(CANNED), DRAINED, SEEDED AND PATTED DRY
4 SLICES CHEDDAR CHEESE

Mix cream cheese and dressing mix until well blended.  Spread generously on 2 slices of bread.  Layer with jalapeno slices and cheddar cheese.  Top with plain bread and butter outside of sandwich.

Heat large cast iron or nonstick skillet over medium heat.  Add sandwiches, cook 5 to 7 minutes, turning once until cheese is melted and bread is nicely browned.

For more heat you can leave the seeds in the peppers and add a touch of the juice to the cream cheese mix.

Btw, April 12 is NATIONAL GRILLED CHEESE DAY!   Seems to be a day for everything after all lol.

HM that sounds so good! I'm definitely making this! It makes me think of Chili Rellenos and I love those! Sometimes I put the green chopped chilies from the can on my grilled cheese sandwiches.

I also saw that recipe and I thought...why the heck did I never think to add jalapeno peppers to my grilled cheese sandwiches before?
I think I would rather use fresh peppers though, I would roast them just like I do red peppers for my salami sandwich.

I use very plain American cheese.  I'll have to get brave enough to try jalapeno.
Instead of buttering the bread to "fry" in a skillet, I simply put the bare bread sandwich in the broiler ....... it toasts beautifully in a minute or two and I have far less calories.

You might be able to use the frozen "poppers" that are in the freezer section.  The only thing that might be a bit different, not saying it would not be good, but they are breaded to give them a crunch.  That might be great in the sandwich.  I think if you wanted to keep the crunch it might be worth baking them then adding to the sandwich.

Hi Vicki, and everyone!!! I've had a lot going on lately and haven't taken the time to read the blogs and respond as much as I would like. Hopefully my time obligations ease up during April and I can contribute on a more regular basis.

I goy a new cuisanart 5-in-1 griddler with a g.c. someone gave me for Christmas but haven't really used it a lot yet        too much going on and when I shop I forget about picking up spinach or oyher greens for my paninni's         but it can be used for grilled cheese, steaks, quesadilla's etc because it cooks flat or closed w/ grill or griddle plates

I did have grilled cheese sunday eve  and maybe i'll have one on the 12th
