Have you all noticed all the different kinds of marshmallows in the stores? So many! You've got the Peeps for Easter and you have Peeps for Christmas. there's the regular vanilla but now you also have chocolate and strawberry and new for Christmas are peppermint marshmallows There's coconut covered ones, the old stand-by fruit flavored ones. All different colors and different shapes. we have cinnamon ones, toffee ones and mocha ones. fairly new is The Campfire ones which are huge and meant to be held over a campfire with a stick. i've noticed that making your own marshmallows is a big trend right now-easy but sticky!

Yes, Vicki -- I've seen all of those and have been astonished.
Many, many years ago, each Easter I bought several little boxes of yellow chicken Peeps. I cut open the box and put them on the top of the 'fridge. Days/weeks? later they were hard and crisp ..... absolutely delicious.

My favorite are the mini marshmallows! I plop them in hot cocoa! I also use marshmallow fluff for one of my fudge recipes.

Try putting marshmallow peeps in the microwave for 10 or 15 seconds. They puff up soft and gooey good.

My Grandson and I have been talking about making marshmallows. I think it might be a project for a day he is off school either for a snow day or a holiday.
They do sound easy to make I just have to get a box of unflavored gelatine.

I've made marshmallows many times. I have a recipe for chocolate marshmallows that I've used often. If anyone is interested I will post it here.

I have also noticed the different flavors available in the stores. I'd like to try the cinnamon or chocolate ones, but I somehow need some rationalization to buy something like that!

HMMM! Why do I make these? I guess just because they are a unique, and it's fun to say I made them. They are a little messy!

Chocolate Marshmallows

1 Tsp cornstarch
1 Tsp confectioner's sugar
Melted or softened butter for brushing pan

2 packages Unflavored gelatin (1 1/2 Tbsp)
4 ounces Semi sweet chocolate, coarsely grated
3 Large egg whites, room temperature
11/4 cups sugar
2 Tbsp light corn syrup
1/8 tsp salt
1 Tsp vanilla extract
1Tsp unsweetened Cocoa Powder
2 TBSP unsweetened Cocoa Powder

In a small bowl, whisk together the cornstarch, confectioner's sugar and 1 teaspoon cocoa powder. Using a pastry brush, lightly butter the bottom and sides of a 13"x9" baking pan. Dust the pan with the cornstarch mixture. Evenly cover the bottom of the pan with 2/3 cup of grated chocolate.

In a small bowl, sprinkle the gelatin over 1/3 cup water, make sure the gelatin granules are evenly moistened. Put the egg whites in a large bowl of mixer.

In a small heavy saucepan, stir together the granulated sugar, corn syrup and 1/2 cup water. Bring the mixture to a boil over high heat, washing down the sides of the pan occasionally with a wet pastry brush. Insert a candy thermometer (be sure the bulb is completely submerged, but not touching the bottom of the pan) When syrup reaches 230 degrees, begin beating the egg whites at medium high speed. When the whites are foamy, add the salt and continue beating until the sugar syrup reaches 245 degrees.

Remove the sugar syrup from the heat and quickly whisk in the softened gelatin until completely dissolved. Beat the sugar syrup into the egg whites in a slow stream at high speed. Add the vanilla, and beat the whites until just cool. About 5 minutes. Using a large rubber spatula fold in 2 Tablespoon unsweetened cocoa powder.

Spread the meringue in the prepared pan and smooth the surface. Let stand uncovered in a cool dry place until set, at least 2 hours.

Sprinkle a work surface with the remaining grated chocolate. Run a knife around the edge of the pan to loosen the marshmallow. Turn out the marshmallow onto the chocolate. Quarter the rectangle. Cut each quarter into 12 even pieces. Roll each piece in the chocolate until completely coated. Set the marshmallows on a rack to dry for 2-3 hours before serving. (Make ahead: the marshmallows will keep in an airtight container for up to 1 week)

Variation: Sprinkle melted semi sweet chocolate on Marshmallow squares. Place on plate lined with wax paper and freeze for 5 minutes or refrigerate for 20 min.

Variation: Drizzle marshmallow squares with carmel and then with melted semisweet chocolate. Place on a plate lined with wax paper and freeze until firm. About 1 hour.

This is the recipe I found in the paper. It sounds easy if one can find the marshmallow powder. I'm not sure where to look for it.

Whip 2 egg whites until almost stiff. Add 1 t. vanilla and whip until stiff. Whip in 1/2 cup sugar 1 t at a time Finally add 1 T powdered marshmallow (root) and whip again. Place by teaspoonful on cookie sheet. Bake at 325 for 1 hour.

I think I'd put them on parchment just in case they wanted to stick. Maybe a natural food store would sell the powdered marshmallow root. These are supposed to come out airy and not rubbery.

my d.i.l.'s s.i.l. brought candied sweet potatoes yesterday with
gingerbread marshmallows and pecans it was very good
unfortunately she packed it off before i could get a second helping and i had only took about a tbs to try just in case
