I'm looking for some good side dishes to make for the holidays.  I always seem to make the standard things and its getting old.  Nothing wild or exotic just flavorful and not what I'd always

We always have rutabagas.  We just cook them for a long time and drain and mash them.  They are so delicious with turkey gravy on them.  Ubless you are like my daughter who does not like them, and then I fix green beans for her,

I love all the ideas on this thread.  I used to make a jello salad with Lime Jello, Sour Cream, crushed pinapple, and walnuts - I think I'll have to find the exact recipie now!

i DO A couple  of WINTER SUASH SIDE DISHES; THAT USUALLY GO OVER QUITE WELL
.
#1 ACORN SQUASH HALVES,FILED W/SWEET PEAS& PEARL ONIONS
use one acorn squash to serve two peopl; leftovers reheat well & are nice w/ any roasted meat or poutry.
Cut in half, crosswise to make two cups to hold peas.
Trim off bottoms of halves (outsides) to allow halves to sit steadily on  cookie sheet or serving plater.   Rub  insides w/  butter.place inroasting pan.cover w/ foil.Bake @350'-400'  about /2 hr till tender.
Keep warm
Prepare  frozen  peas & pearl onions separately .( as per pkg directions);
& combine in a bowl. divide among cooked squash halves & serve......
 These can be made ahead; covered  & chilled...Reheat just before serving. They look nice 9 veryfestive) on  a serving a platter Each person gets one squash half, filledw/ peas & pearl onions .

#2  Buttercup squash puree
Buy enough  buttercup;   not butternut squash to serve your guests. Cut each in in half,clean out insides of seeds & stringy fibers...Cook in oven or microwave ( cut side down) til skin is easily pierced w/a fork.  Allow to cool, till safe to handle.Scrape out cooked flesh, into a bowl; add butter & season to taste w/ choice(s) of  s&p;  nutmeg; ginger, allspice, cinamon.Mash/whip pulp till smooth, ading more butter as desired.Serve hot. Buttercup squash is naturally sweeter, so you may not need to add sugar.Taste it ( your seasoned puree), first & mix in a litle brown or white granulated sugar,if desired, to taste.

I started making a corn casserole recipe after tasting it at a church pot-luck.. easy to make and makes a great side-dish.


Company Corn Casserole

1/2 c. melted butter
1 can whole kernel corn-drained
1 can cream-style corn
1 pkg. jiffy corn muffin mix
8 oz. sour cream
2 eggs, beaten
8 oz. shredded cheddar cheese

Melt butter in bottom of 2 qt. casserole dish.  Mix and add all ingredients except for the cheese.  Bake at 350 degrees until golden brown (approx. 45min to 1 hr.).. will be soft in center.. top with cheese and heat til melted.

I've also used the frozen corn mixed with green & red peppers and onions in place of some of the canned corn.. this turns out quite pretty with all the colors.  This makes a big side-dish and will keep really warm for quite some time.  Good take-a-long dish also.

Hope you like it, it has become a favorite at our house and at our church as well.

i  typed out & submitterd two of our fave THANKSGIVINGDAY side dishes in the hope that you would find oned or both useful.ACORN SQUASH HALF FILLED w/ SWEET PEAS & PEARL ONIONS & BUTTERCUP SQUASH PUREE.
So far, NEITHER has SHOWED UP,as yet   
At the moment; I'm too tired to try again; maybethey'll showup overnight,whileI'mhaving my dinner, restingup & sleeping.Laughing
YAAY; BOTH RECIPES HAVE ALREADY/FINALLY APPEARED. I HOPE THEY HELP YOU OUT?????????????

Nancy; mine is similar to yours but I add 2TBS  finely minced sweet onion &  hand rubbed dried  celery leaves.....  one tsp is enough  for 3 cups cole slaw mix.

I wonder if everyone would post their cole slaw recipe........ Mine is simply MIRACLE WHIP .... not mayonnaise :-) with lots of sugar and a bit of vinegar.

One of the things we usually have(because Mom always did for years) is a mixed vegetable/rice mix.  You can use any brand frozen or canned mixed vegetables, mix in about 1/2 cup instant rice and cook for the time needed to heat the vegetables through. ( I always add about 1/2 cup water no matter what the package directions are.)  You can season with salt and pepper before serving or let everyone season their own. I think this year instead of the usual sweet potatoes, I will make roasted root vegetables.  Sweet potatoes, white potatoes, parsnips, carrots and leek.  Drizzle with olive oil, sprinkle with garlic powder and bake for about 40 minutes at 400*.  You can also add other spices.  I have used basil, rosemary, oregano with good results.

Bacon Cheddar Deviled Eggs 

Original Recipe Yield 24 deviled eggs 

 Ingredients

12 eggs

1/2 cup mayonnaise

4 slices bacon

2 tablespoons finely shredded Cheddar cheese

1 tablespoon mustard

 DirectionsPlace eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.  

Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.

 

Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

Here is the recipe for the Straw. Jell-o Dessert

2 PKS. OF STRAW. JELLO
2 - 10 OZ. FROZEN STRAWBERRIES (DRAINED)
1 -  CAN LARGE CRUSHED PINEAPPLE (DRAINED)
4 - SMASHED BANANA'S
2 - PINT SOUR CREAM

MIX THE JELLO WITH 1/2 AMOUNT OF WATER, ADD THE STRAWBERRIES, CRUSHED PINEAPPLE AND THE BANANA'S.  TAKE A 9 X 13 PAN AND POUR 1/2 OF THE MIXTURE IN THE PAN.  THEN PUT DOLLOPS OF SOUR CREAM ALL AROUND IN THE PAN.  TOP WITH THE REMAINDER OF THE MIXTURE.  REFRIGERATE UNTIL FIRM.

My cole slaw is just mayo, sugar, vinegar and some spices and let it sit to marry the flavors. Simple and good. No fuss no muss
