I haven't made fried chicken since my 2 sons left home. Neither my husband nor I need the breading, the skin or the extra grease. About once a year we'll have a "treat" with KFC.

My mother used to make fried rabbit.  I remember really liking it.  I was pretty little, and didn't think about the fact that I might have been eating "Bugs" or "Peter".  LOL  LOL

I still fry chicken in an old cast iron DEEP pan. I mix saltines(crushed), bread crumbs(flavored), flour, salt and pepper. Use plenty of oil and then drain it off keeping just enough for making gravy. Love fried chicken but am just to lazy to make it more than once or twice a month. Even less here lately. Mashed potatoes(homemade) are a must for this meal fixer.  So don't worry there are plenty of us left eating fried food.

I love fried chicken!   Unfortunately my husband doesn't like breaded meat.  So about once or twice a year I will stop and pick up fried chicken and forget about cooking lol.  If he wants to eat something else that will leave more for me lol.

Nancy,  my mom does her fried chicken in a beer batter rather than bread crumbs.  I think she got the recipe off the food channel.

I love fried chicken too  but don't have it very much because I'm on a diet. My mother
loved fried chicken and when she was in an assisted living in MI, I would always take
her fried chicken when I went back there. We had 5 pieces of chicken left after lunch
and I told her to save it for dinner that we would have it together. When I got back
there all the chicken was gone. I said "Mom you ate 5 pieces of chicken!!!" She said
"I ate 3 pieces, wings don't count!" That was my Mom!!! Everytime I think of fried
chicken, I remember what she said.  I sure do miss her!!!

Fried Chicken. I really don't fry very much. Don't want to increase my cholesterol and hat the greasy mess on my stove. I do oven-fry.
