I had great tomato sandwiches this summer and your post just reminded me of them. Any toasted bread will do, but the tomato must be fresh and ripe, I agree 100% with you on that. I particularlly like beefsteak or the heirloom "ugly", thickly sliced with salt and mayo. I could eat these all day.

Ann, I just saw your note about the tomato on the grilled cheese.I do like tomato on my grilled cheese but..and this is the thing it has to be a ripe, in season tomato. I also love bacon on my grilled cheese sandwich. Funny thing I like my Mac-N-Cheese the way I like my grilled cheese. I will sometimes add sun-dried tomatoes and or bacon to the Mac-N-Cheese. (that way I "round out" my meal..Meat, Vegetable, Dairy, Grain..LOL)
