Why do my cookies turn flat when they are nice and puffy when I take them out of the oven?

Nancy, there was a great episode on the Food Network show Good Eats where Alton Brown described ways to get crisp VS puffy cookies. Here is a few suggestions I picked up from the show.
1. Butter will give a flatter, crisper cookie.
2. Margarine will give a softer, puffier cookie.
3. More white sugar will give a crisper cookie.
4. More brown sugar will give a softer cookie.
There were LOTS more changes and "tweaks" to the traditional cookie recipe that I cna't even begin to remember but I think if you go to the website you might be able to get more ideas. There were some where changes to milk VS water were made, more or less baking soda were all addressed.

This website has an article that is titled "Baking Chocolate Chip Cookies Just Right" It will give you the exact proportions for each type of cookie i.e Soft and Chakeiy, Soft and Chewy, Thin and Crispy, and Puffy and Fluffy. Hope that helps. P.S. i think you will find it under "Resources" if it isn't listed at the bottom of the recipe page.
