Every January, I love to host a after holiday potluck with our friends. Everyone brings their favorite crockpot recipe to share and we catch up on events we missed over the holidays. I usually make my family recipe chili and sweet corn bread. This year I was thinking of doubling the potato soup recipe found here on VBB. Has anyone ever used this recipe and have any tips to offer when making it? I haven't decided on which dessert I will be baking. There are so many delicious recipes to choose from here on VBB.

Dessert? Make cookies!
Cookies are sooooo good for a dinner like you're planning. You can make them far ahead and freeze.
Look right on here for Ice Cream Sundae cookies ..... so FESTIVE and so new to most people.
And, as usual, I have to say that White Chip Island Cookies are my favorites.

If you do potato soup, put out bowls of chives, green onions, bacon pieces, shredded cheese(swiss, cheddar, etc.) sour cream, to let people add extras to the soup. If you are a pie baker, you could do an apple pie in a 9 x 13 pan & serve with vanilla ice cream with a pinch of toasted coconut on top.

I usually bring the cheese ball and crackers. I'm making one this weekend for a Political Open House event. It's cream cheese and pineapple with a little red pepper and seasonings wrapped up in a crushed pecan layer.

Cindy, thinking about your cornbread to go with your chili try this. Make your regular cornbread then make a batch of this. That way if people don't like spice they can have the plain.
Make your cornbread batter, if you use a mix I substitute 1 can of creamed corn for the liquid called for, I will mince up 1 or 2 jalapeno peppers and add that to the batter next add a hand full of shredded cheddar cheese. Pour into muffin pan and top each muffin with another pinch of cheddar cheese. These are great with chili or gumbo. If you don't like creamed corn use some sour cream or Greek style yogurt for part of the liquid. The added jalapeno peppers and cheese make the muffins moist and give a bit of a kick to them.

Good idea! I have nice small bowls with lids that I can individually bring the already prepared items. The pie idea sounds soooo good, too! Thank you!!

Great idea, Nikki! I'm going to make both corn breads. I know my family likes to have a little kick with their bread and I know some folks like sweet corn bread. It's probably going to be a party of 12 to 15. So, it will be perfect! Thank you for the recipe. I'm going to use it.

Wow! Such great ideas! I'm so glad that I joined this forum and am able to share tips and suggestions with new friends! The pot luck is tonight. I have my potatoes in the oven to make VBB's potato soup and getting ready to make VBB's cornbread as suggested making one sweet cornbread and the other with a "kick" per Nikki's recipe. I haven't decided on what dessert to bring. I'm thinking of maybe a cherry pie type in a 9 X 13 pan. I'm so excited for tonight. I haven't seen some of these friends since Thanksgiving!! Thank you for the wonderful tips and suggestions. Stay warm!

The potato soup was awesome! I doubled and probably could have even tripled the potato soup recipe. I am glad that I put the cheese, bacon bits and onion is small separate bowls. I also made both regular and spicy corn bread. There were no left overs to bring home. So, thank you all for the great suggestions. It was also a great time to sit and catch up after the holidays!

You know... we get so busy with life events sometimes and the next thing you know is that the holidays have passed! I had a few friends out of town and one being sick this past year. So, it was a great opportunity to have a casual potluck dinner and catch up with everyone in one setting. With the economy being tough right now, we are thinking about doing them more often. I think having a group of friends get together and just have a simple meal like soup, some bread and a nice dessert is a wonderful way to spend an evening.
When you have good friends you don't need to spend a lot of money at a restaurant or have a "fancy, elaborate" party.
A few traded recipes can make an evening a lot of fun.
No one has to feel like they can't afford to join the group and even contributing to the potluck can be as simple as a plate of cookies, a bread or any number of little things.
It's the company that is important not the amount spent.
