OK I have question, I have several recipes calling for light cream in them. Most are candy recipes. I found several substitutes as AZ doesn't seem to carry light cream. So, I'm wondering< what is a

OK I have question, I have several recipes calling for light cream in them. Most are candy recipes. I found several substitutes as AZ doesn't seem to carry light cream. So, I'm wondering< what is a suitable substitute for light cream in candy recipes?

Also, I have a few recipes calling for vanilla caramels and I don't know what the heck these are!! Does anyone have any clues on these? I thought of Brach's first, but their's don't look right, kinda swirled, not pure white as the pictures show. I'm really at a loss here!!

I just wrote a post on it to bring it back to the first page    where you can copy the whole thing if you want to check  or just copy the whole thing   hope it helps

here's what it says about cream

Cream (half and half)
1 cup
7/8 cup milk plus 1 tablespoon butter
Cream (heavy)
1 cup
1 cup evaporated milk OR 3/4 cup milk plus 1/3 cup butter
Cream (light)
1 cup
1 cup evaporated milk OR 3/4 cup milk plus 3 tablespoons butter
Cream (whipped)
1 cup
1 cup frozen whipped topping, thawed
Cream cheese
1 cup
1 cup pureed cottage cheese OR 1 cup plain yogurt, strained overnight in a cheesecloth

I'm far from an expert, but when I use any recipe that calls for "vanilla caramels", I buy a bag of Brachs from any/every grocery store in this area.  They sure aren't white - just a plain, solid (not swirled) tan color.

Nancy is correct in the vanilla caramel. 
It is a tanish color.  A chocolate caramel is much darker brown.

light cream = coffee cream = table cream (18 - 30% fat) Substitutes:  evaporated milk OR half and half OR 1 C = 7/8 C milk + 3 tablespoons butter OR blend equal parts milk and cottage cheese

 when we chocolate cookies and we don't have enough we make the with the chocolate powder in the can.

OK now I'm REALLY confused on the whole cream thing. I went searching and everything I saw said light cream has a different butter content than that of the creamiers out there and even half and half was different. With baking they said using melted butter and whole milk would work, but it won't work for candy.
Candy is very specific and the ingridents are fairly expensive so I don't want to try some just so it fails. I'll keep researching as I honestly don't know what to use for the candies.

As for the caramels, the recipes I have show them decorated with a white one, so I don't know. Will just try it with the Brach's when they come out again this year.
