Cheri, did you see the "Lucky You" Mint Pie that is shown on the home page? They must have just put that up today for St Patty's Day. It looks and sounds delicious with chocolate and mint.

I just copied a recipe from a site I trust a lot. http://www.kingarthurflour.com the recipes I have tried are fantastic. The recipe I just printed is Chocolate Mint Torte. Here it is if you would like to try it as well, we can compare notes after!
YOU WILL NEED TO GET A STABILIZER FOR THE FILLING. Check the store where you purchase you baking goods. There should be packets of stabilizer in the same aisle as the baking ingredients. I have used one by Oketer.
Chocolate Mint Torte
Chocolate Cake Batter:
4 large eggs
3/4 Cup granulated sugar
1/2 tsp salt
1 tsp vanilla extract
2/3 Cup flour
1/3 cup cocoa
1 1/4 tsp baking powder
1/4 Cup vegetable oil
6 Tb buttermilk
Mint Filling:
1/3 Cup granulated sugar
2 Cups heavy whipping cream
3 to 4 drops peppermint extract or oil
1 to 2 drops green food coloring
Ganache Filling and Topping:
1 Cup semi sweet chocolate chips
3/4 Cup heavy cream

Directions:
1. Pre heat oven to 350 degrees F. Prepare a 10X15 jelly roll pan by lining it with parchment and spry with cooking spray.
2. For the cake batter; In a stand mixer whip the eggs until thick and pale yellow. Gradually beat in sugar, salt and vanilla.
3. Sift together the flour, cocoa and baking powder. Fold into the thick egg mixture.
4. In a measuring cup whisk together the oil and buttermilk. fold into the chocolate batter just until combined.
5. Pour the cake batter into the prepared pan and bake for 8 to 12 minutes. The edges will begin to pull away and the center will spring back when lightly pressed.
6. Remove the cake from the oven and use a knife to loosen the edges. Lift the cake and parchment paper onto wire rack to cool.
7. To prepare filling: In a small bowl stir together the sugar and the whipped cream stabilizer. In a large bowl mix the cream, peppermint flavor and the food coloring.
8. Whip the cream until it begins to thicken. Sprinkle in the sugar mixture and continue to whip until the mixture is thick and mousse like.
9. To prepare ganache: Place chocolate chips in heat proof bowl. Add the heavy cream and microwave for 60 to 90 seconds, or until cream is very hot. Whisk together until chocolate melts and mixture is smooth.
10. To assemble: Cut cake crosswise into 4 even sections, each a scant 4X10. Spread three of the sections with 1/4th of the cooled thickened ganache.
11. Divide the filling into thirds. Spread 1/3 of the filling onto each ganache topped cake section. Be sure to leave one cake section un filled, to place on top.
12. Carefully stack the three filled sections. Place the fourth(unfilled) section on top, pressing down on the whole stack gently.
13. Wrap the whole torte in plastic wrap. Freeze for at least 2 hours or up to two days. Remove from freezer, remove plastic wrap and let the cake thaw for 15 minutes before serving. Reheat the reserved ganache and pour it over the cake before slicing.

I think this would also be very good done just like the pumpkin roll cake. Put the filling in the cake and pour or spread ganache over the cake. And it would be a bit less time consuming.

I made the mint pie on the home page.. But with one "minor" change. I did not have a chocolate crumb crust so I used some of those Chocolate Truffle Cookies that I stashed in my freezer. Ok, 2 changes, I did not use the mint flavoring. The pie was great! Will be making this again. (I did not add sugar to the cookie crust, figured there was enough in the cookies anyway.)_

It's fun to decorate for St. Patrick's Day too. There are a lot of things available especially at the Dollar Tree stores.

Jalapeno with some cheddar cheese mixed in. Or Jalapeno and onion. Both would be good.
If you do the spinach add in some feta, definitely not Irish but it would taste good.

I don't think I'll be up to fixing St Patty's day feasts of the heart this year. The mint pie has to be the end of a great days cooking though. A hit whenever it's served. Takes to decorating well also.

I attended a St.Patricks Day party thrown by an Irish family living in Ontario Canada. The Hostess served a brothy Irish stew, Irish soda bread and Irish coffee.

Irish Soda Bread. I have an authentic recipe from a friend (elderly woman) who grew up in Ireland and taught me how to make it over 20 years ago. Corned beef, of course. Irish soda farls. And our family recipe for Blarney Stones. Yes, we are very Irish.

We will have corned beef,cabbage,carrots and red potatoes.Left overs will turn into toasted Rubin's made with my home made sauerkraut which turned out great,I can hardly wait for the left overs!

I like to decorate with green... but I never have cared much for making other foods green. Like potatos or rice, they just do not look good to me when they are green.

I don't think green food appealing unless is a Mexican dish!
