Spring Bridge Luncheon

  Our Children's Home Society Auxillary puts on a spring bridge luncheon every year as a fund raiser.  Here are the recipes that we are using this year.

TRADER VIC"S CHICKEN SALAD
8 cups diced chicken
2 cups sliced celery
1 cup sliced water chestnuts
1/2 cup chopped green onions
1/2 cup sliced almonds or cashew pieces
4 Tablespoons currants
1 small jar chutney ( 8 tablespoons)
2 lemons ( juice of)
20 ouncce can of pinepple tidbits (very well drained, add just before serving)

Dressing
2 cups Best Foods (Helmanns ) Mayonnaise
1/2 cup sour cream
1 Tablespoon curry powder

You may not need all of the dressing, use just enough to make salad moist.

Serve on Bed of Lettuce.

We also serve a fruit salad and fresh baked warm dinner rolls

For dessert we serve two bar cookies: 

SUPER LEMON BARS
1 cup butter
1/2 cup powdered sugar
2 cups flour
4 eggs
 4 Tablespoons Lemon juice
2 cups sugar
2 lemon rinds (zest), grated

Mix butter, powdered sugar and flour together.  (cut in butter like pie crust)
Pat into a 9"x13" pan.  Bake 15 minutes in a 350 degree oven.
Meanwhile beat eggs slightly and mix in remaining ingredients.  Pour over hot crust
Bake 20 min at 350 degrees
Remove and sprinkle with additional powdered sugar
Cool over night or 4 hours in the refrigerator.  Cut in squares.

We also serve for dessert:

TURTLE BROWNIES

1 bag Kraft Caramels (14 oz)   unwrapped   2/3 cup Carnation Evaporated Milk, divided
1 package German chocolate cake mix (18 oz)
3/4 cup softened butter or margarine
1 cup chopped walnuts
1 package Nestle Semi semi sweet chocolate chips (12 oz)

Combine caramels and 1/3 cup evaporated milk in top of double boiler over simmering water, or in a heavy saucepan.  Stir until melted.

Combine cake mix, 1/3 cup evaporated milk and butter.  Cut in like pie crust until dough holds together

Press 1/2 of dough into a greased 9"x13" pan and bake 6 minutes at 350 degrees
Sprinkle with nuts and chocolate chips.  Pour caramel mixture over and spread evenly.

Crumble remaining dough evenly over top

Bake at 350 degrees for 18 minutes

Cool and cut into squares.

The chicken salad sounds great.  A lot of people don't like curry but I think the 1 Tb isn't much.  The chutney sounds great in the salad as well. 
A group of friends get together once in a while and we all bring a dish I think this may be the next one I bring.

Wow! 80 people is a big group.  What does your luncheon raise funds for?  Or do your have multilple causes?

Our group is an auxillary of Children's Home Society of California.  CHS started out as an adoption agency, but times change so missions change.  We now are primarily concerned with children at risk.   We have group homes, we work with low income mothers to find and provide low cost child care, so the mothers can work and get off welfare.  We also provide some foster care.  The auxillaries generally work to provide child development materials for agencies all over the US, and occasionally abroad.  We have distributed for free over 2 million pieces.  The topics range from general things like "what to expect from a 2 year old" to specific titles like potty training, or what to do when your child starts to bite others.  93 cents of every dollar earned goes directly to services
