Not everybody loves fruit cake , including me .
There many variations of fruitcake .

My family never would eat fruitcake. So I made fruitcake cookies. Sort of like chocolate chip but with candied fruitcake stuff. Everyone loved those. Called Lizzies.

I like making fruitcake with my mother , but it just has never really appealed to me to try it .

Dislcaimer : Not my recipe

Dark Fruitcake

3-1/2 cups (1-1/2 pounds , mixed diced
fruit and peels for fruitcake )
1-1/4 cups(8 oz) dark seedless raisins
1--1/4 cups( 8 oz) light seedles grapes raisins
1 cup (8oz) chopped california walnuts
1 cup (4 oz ) chopped pecans

3 cups sifted enriched flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoons nutmeg

1 cup shortening
2 cups brown sugar
4 large eggs (1 cup)
3/4 cup grape juice

Mix fruits and peels, raisins , and nutss. sift
together flour , baking powder , salt , and
spices ; sprinkle 1/4 cup over fruit mixture
mixing well. thoroughly cream shortening
and sugar ; beat in egss , one at a time
Add dry ingredients to creamed mixture
alternately with grape juice , beating
smooth after each addition . Pour over fruit mix
well .
Line two 8 1/2 x 4 1/2 x 2-1/2 inch loaf pans
with paper ; allowing 1/2 inch to extend
above all sides . Pour batter into pans
filling 3/4 ful ; do not flatten .
Bake in very slow oven (275 %) 3 to 3 -1/2
hours or till done . (Have pan of water on bottom
shelf of oven ) .
Cool in pans , then turn out . Makes 6 pounds.
If desired , wrap cakes in cheescloth and
moisten on all sides with brandy
or wine . Wrap in foil and store in
refrigerator or cool place for 3 or 4 weeks
moistening again once week.
* Or take in five 5-1/2x 3-1/4 -inch pans
at 300 % for 2 to 2 -1/2 hours or till done .

This fruitcake is cake with fruit in it not just a bunch of fruit squished togeather. That's why we like it. I usually make a syrup of sugar, water, corn starch and vanilla to poor over the individual slices.

Fruit Cake

1lb fruitcake mix

1 1/2 cup chopped nuts

1/2 cup golden raisins

2 1/4 cup flour

1 cup butter or shortening

1 1/2 c sugar

5 eggs

1/2 cup milk or Orange juice

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon nutmeg

1 package cherries or pineapple

Cream shortening and sugar, add unbeaten eggs slowly. Mixing well between each. Add fruit nuts and OJ or milk.

Sift dry ingredients together. Fold into liquid mixture. Mix completly.

Pour into greased floured bunt cake pan, Garnish with cherries or pineapple.

Bake at 275 degrees for 3 hours or until done.

my mom loves fruit cake so did all my grandparents. i never tried it. i made her one many years ago. i lost the recipe.i send away for a texan pecan fruit cake for her every year. she loves it. the recipes up here look great. maybe i will give it a shot.

Do you have a recipe for your fruit cake cookies? they sound good.My mom also loves fruitcake.Can you post it please? We use to say there was only one fruitcake in the world being regifted and passed along.I guess it never came to my moms house, she would have ate it......Happy Holidays to all.They will soon be upon us in a blink of an eye.

4 cups (1-3/4 pounds ) mixed diced fruits
and peels for fruit cake
1/2 cup pitted dates, cut up
1/2 cup dried apricots , cut up
1/2 cup dried figs , cut up
1-3/4cups (8ounce ) light seedless raisins
2 cups (8 ounces) blanched amonds, slivered
2 cups flaked coconut
******************
2 cups sifted enriched flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1 cup shortening
1 cup sugar
1 teaspon rum flavoring
5 eggs
1/2 cup unsweetened pineaple juice

Mix fruits and peels, dates, apricots , figs,
raisins , almonds anc coconut . Sift together
flour, baking powder, and salt: sprinkle
1/2 cup over fruit mixture , Mixing well ,
Throughly cream shortening , sugar , and flavoring
add eggs , one at time , beating well after each . Add
dry ingredients to to creamed mixture alternately with pineappke
juice beating well after each addition.
Add fruit mixture , stirring until well mixed.
Line two 8-1/2 x4-1/2x 2-1/2 inch loaf pans with
paper . allowing 1/2 inch to extend above all sides
of pan . (or bake in smaller pans) Pour batter
into pans , filling 3/4 full .Bake in very
slow oven (275%) 2-1/2 hours or until doen.
(have pan of water on bottom of shelf of oven
whiile baking .) Makes about r pounds.
Note : you can mix your own candied fruit
and peels if you prefer . We like 4 ounces each
candied fruit citron, orange peel , lemon peel , and cherries;
and 12 ounces of candied pineapple . Buy them
chopped or diced your self .

Pineapple Glaze

Combine : 1/4 cup canned unsweetened pineapple
juice and 1/2 cup light corn syrup bring quickly
to a rolling boil . Remove from heat.
Immediately brush over cooled fruit cakes.
Decorate top of cakes with blanched almonds,
candied cherries , or candies . When set ,
brush on a second coat of glaze.
(Reheat glaze to boiling each time you use it.
Allow glaze to dry thoroughly before wrapping
or storing cakes , Makes enough glaze
to give double coat to 6 punds of fruitcake .

Fruitcake Cookies

3 sticks margarine
1-1/4 sugar
3 C.Flour
1/2 tsp. cloves
1/2 tsp. Cinnamon
1/2 tsp. allspice

4 eggs
2 tbsp / wine
1 lb . diced candied cherries
1 lb. diced candied pineapple
2 qt. chopped

Cream the margainr and sugar in a bowl. Add flour and spices and mix wel.
Add the eggs , one a time ,beating well after each addition. Add the wine.
fruits and pecans and mix well. Drop by teaspoonsful on greased cookie
sheets,Bake 15 minutes at 350 degrees ,having pan of wateron bottom of
rack of oven .

I can't wait to try the cookies. They sound very yummy. Does any one have a recipe for fruitcake that is made with Tomato Soup? My neighbor (God rest her soul) used to make one for me every Christmas. I miss her and her wonderful Fruitcake.
