My grandma's pumpkin pie recipe hands down!!  It is different from any other I've seen.  (I realize this is 2010's post but better late than never I guess, right??!!)  Wink

Gale, I actually made that pumpkin trifle about 5 yrs ago. My partner loved it and asked me to make one so that he could take to his family for the holidays. So I made one for his family and one for mine. The result being that it is now my holiday oblogation (LOL) to make this for his family. It truly is a great holiday recipe that is not only easy and fun to make, but it tastes great and looks beautiful. I think it's a great recipe to share with everyone.

I agree it is wonderful and very easy to make.I'm going to make my own ginger bread cake,the boxed ginger bread is so expensive I have all the ingredients so why not! I love the Libby's pumpkin pie,I omit the cloves,not a big fan of cloves,I add a little more cinnamon.I think this is great that you bake,both my son's bake.

Thats funny, I was actually thinking of doing the same thing Gale. Only I wanted to do it trying this pumpkin gingerbread recipe I read on a site called Simply Recipes. Check it out. I guess it could possibly end up being too much pumpkin, but..... I am a pumpkin fanatic.

Here is a great pie. I always keep a bag of cranberries in the freezer for this pie and for my Cranberry Almond Pound Cake.
Cranberry Streusel Pie.
1 lb cranberries, fresh or frozen
3/4 C white sugar
1/4 C flour
1/2 Brown sugar
1/2 Cup chopped walnuts
1/4 C flour
1 tsp butter or shortening
1 9 inch pie crust
Pre heat oven to 350 degrees F.
Chop cranberries, add the white sugar and 1/4 cup flour. Stir to combine.
In a bowl combine flour, brown sugar, nuts and shortening.  Work with a for or fingers to a crumbly mixture.  Sprinkle on top of cranberries.
Bake for 45 minutes. If you have to you can cover edges of crust with foil if it begins to brown to much.

Hi Joshua,I went on the site and the recipe looks great.I don't think it would be too much pumpkin at all.It may even be better.I just cooked some pumpkin the other day and froze it.I'm going to use that recipe for the trifle.Thanks for sharing.

The recipe I was given over 40 yr. ago turned out to be from the Libby's label. I might use another brand of pumpkin when I can not find Libby's, but the recipe stays the same.

Thanks to everyone for the recipe:
i have a pumpkin cheesecake recipe:

Crust:

1 cup (100 grams) graham cracker crumbs (or crushed Digestive Biscuits)

1/2 cup (50 grams) crushed ginger cookies, homemade or store bought

1 tablespoon (15 grams) white sugar

4 - 5 tablespoons (57-70 grams) unsalted butter, melted

Pumpkin Cheesecake:

2/3 cup (145 grams) light brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1/8 teaspoon ground nutmeg

1/4 teaspoon salt

2-8 ounce packages (450 grams) full fat cream cheese, room temperature

3 large eggs, room temperature

1 teaspoon pure vanilla extract

1 cup (240 ml) pure pumpkin puree (canned or homemade)

Cream Cheese Topping:

1 cup (240 ml) sour cream, room temp.

1 teaspoon pure vanilla extract

1/4 cup (50 grams) white sugar


Pumpkin Cheesecake:Preheat oven to 350 degrees F (177degrees C) and place the oven rack in the center of the oven. Butter, or spray with a non stick spray, an 8 inch (20 cm) spring form pan. 

Crust: In a medium sized bowl combine the graham cracker crumbs, crushed ginger cookies, sugar, and melted butter. Press the mixture evenly onto the bottom of the prepared spring form pan. Bake 8-10 minutes or until set. Let cool while you make the cheesecake..

Pumpkin Cheesecake:  In a separate bowl, stir to combine the sugar, cinnamon, ginger, cloves, nutmeg, and salt.

In the bowl of your electric mixer (or with a hand mixer), on low speed, beat the cream cheese until smooth (about 2 minutes). Gradually add the sugar mixture and beat until creamy and smooth (1 to 2 minutes). Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape downthe sides of the bowl and beat in the vanilla extract and pumpkin puree.

Pour the filling over the crust and place the spring form pan on a baking sheet to catch any drips. Place a cake pan, filled halfway with hot water, on the bottom shelf of your oven to moisten the air. Bake the cheesecake for 30 minutes and then reduce the oven temperature to 325 degrees C (160 degrees C) and continue to bake the cheesecake for another 10 - 20 minutes, or until the edges of the cheesecake are puffed but the center is still a little wet and jiggles when you gently shake the pan. Total baking time 40 -60 minutes.

Edith- I don't know the answer to this but Nestles will.  Call their 800 number - it's shown all over this site.

ANGEL FOOD CAKE MIX----BETTY CROCKER 1 STEP IS BEST

30 OZ CAN LIBBY PUMPKIN MIX

1 TSP PUMPKIN PIE SPICE

1 TSP GROUND NUTMEG

MIX TOGETHER--SPRAY 13X9 PAN WITH PAM, WIPE OUT EXCESS

BAKE 350 OVEN-----30-35 MIN.




TOPPING


12OZ COOL WHIP---LITE IS OK

1 SM CAN PUMPKIN

1/2 TSP PUMPKIN SPIE SPICE

3.4OZ INSTANT VANILLA PUDDING--SUGAR FREE IS OK


STIR ALL TOGETHER

TOP WITH CHOPPED PECANS


It didn't say but I put mine in the refrigerator due to the cool whip.

Hope you try the cake and enjoy it as much as we are.

I Iove thetraditionalpumpkin pie but make it w/o a crust(like a pudding( cuts fats& calories down;  easier too & no concern about making a good crust that might end up soggy,!I've copied yourrecipe into my ownPC recipe folder; thanx for sharingKiss

o be the best of both worlds. Pumpkin Pie Crunch. 1 Can pumpkin puree NOT pie filling 2 eggs 1 1/2 Cups Caration evaporated milk 1 1/3 Cup granulated sugar 1 Tb pumpkin pie spice 1/2 tsp salt 1 Package cake mix, I like a spice or carrot cake mix but yellow will work. 1 1/4 Cup chopped pecans 1 Cup butter, melted Pre heat oven to 350 degrees F. Grease a 13X9 pan In a large bowl, stir together pumpkin, eggs, evaporated milk, sugar, salt and spice until smoothly blended. Pour into prepared pan. Sprinkle dry cake mix over the top of pumpkin mixture. Sprinkle nuts over cake mix. Drizzle butter over top of dry mixture. Bake for 50 to 60 minutes or until set and golden. Cool for at least 1 hour in pan on wire rack before serving.  Serve with whipped cream.  Store in refrigerator. I have made this several times, I think next time I will mix butter and cake mix and nuts together and sprinkle over the top of the pumpkin mixture.  It will, I think be more like a crisp topping.  Doning it the way it is in my cookbook there are some spots that don't get moistened with the butter and remain a bit dry.  Very good though.  This is now my favorite "Pumpkin Pie"  Plus it serves 12 to 16 people where a pie may serve 6 or 8. The pumpkin pie is on the bottom with a crispy, crumble topping.

My family prefers Pumpkin Chiffon Pie, topped with whipped cream.  I do use Libby's Pumpkin in that.
