I am not a fan of the traditional pumpkin pie.  I don't like what ends up being a soggy bottom pie. I have found this recipe to be the best of both worlds. Pumpkin Pie Crunch. 1 Can pumpkin puree NOT pie filling 2 eggs 1 1/2 Cups Caration evaporated milk 1 1/3 Cup granulated sugar 1 Tb pumpkin pie spice 1/2 tsp salt 1 Package cake mix, I like a spice or carrot cake mix but yellow will work. 1 1/4 Cup chopped pecans 1 Cup butter, melted Pre heat oven to 350 degrees F. Grease a 13X9 pan In a large bowl, stir together pumpkin, eggs, evaporated milk, sugar, salt and spice until smoothly blended. Pour into prepared pan. Sprinkle dry cake mix over the top of pumpkin mixture. Sprinkle nuts over cake mix. Drizzle butter over top of dry mixture. Bake for 50 to 60 minutes or until set and golden. Cool for at least 1 hour in pan on wire rack before serving.  Serve with whipped cream.  Store in refrigerator. I have made this several times, I think next time I will mix butter and cake mix and nuts together and sprinkle over the top of the pumpkin mixture.  It will, I think be more like a crisp topping.  Doning it the way it is in my cookbook there are some spots that don't get moistened with the butter and remain a bit dry.  Very good though.  This is now my favorite "Pumpkin Pie"  Plus it serves 12 to 16 people where a pie may serve 6 or 8. The pumpkin pie is on the bottom with a crispy, crumble topping.

It is a 14 ounce can of pumpkin puree NOT pie filling.

I have used the recipe in my mother's Betty Crocker Cookbook, following her hint to mix the spices in with the pumpkin, not with the liquid ingredients.  This is so that the spices won't separate out and float on the top of the custard.  Also, my sister doesn't care for pumpkin pie, so I substitute mashed sweet potatoes for the pumpkin.

Does anyone have the original Pumpkin Bread recipe?  I can't find it on this site, just a bunch of new ones or low fat.  I want the good old one my Mom used to make!

I have an amazing (if I do say so myself) Pumpkin Bread recipe.  Best thing is it makes 3 full size loaves.
The recipe calls for  1 can 30 ounces of pumpkin Pie mix.  I never use the pie mix, I use 15 ounces of pumpkin puree and the day before I make the bread I add cinnamon, ginger,clove and nutmeg to the pumpkin puree.  (Or use pumpkin pie spice) Put it in the refrigerator over night then get on with the recipe as follows.

Pumpkin Nut Bread
4 eggs
3 Cups sugar
1 Cup oil (I have also used 1/2 Cup oil and another 1/2 Cup pumpkin to cut back on oil)
1/3 Cup water
1 Can, 30 ounces pumpkin pie mix
3 1/2 Cup flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 1/2 Cup chopped dates
1 Cup chopped walnuts
Pre heat oven to 350
Grease and flour 3 loaf pans, 9X5.
In a large bowl, lightly beat eggs.  Gradually beat in the sugar, oil, water and pumpkin.  Add flour, baking soda, salt, cinnamon; mix well.  Stir in dates and nuts.  divide the batter evenly between pans.  Bake for 55 to 60 minutes or until bread begins to pull away from the sides of the pan.  cool in pans on wire rack for 30 minutes, then remove from pans and cool completely on racks.
I have also added dried cranberries to this and I have also added fresh cranberries.  Both were great.  Fresh ones add a bit more moisture and a bit of a tang.

Awww,...you make me blush!   EmbarassedThank you for the kind words.  I hope you like this recipe as much as I do.  I like it so much that I wrote the page number of the pumpkin bread on the front cover.  (I don't generally write on book covers, I make notes on a recipe page but I got this book at a resale shop and it cost me all of $3.00.)

Here is another Pumpkin Recipe

     Pumpkin Mousse

 
  •  
    • 1 envelope unflavored gelatin (2 1/4 teaspoons
    • 1/4 cup cold water
    • 1 (15-ounce) can pure pumpkin
    • 3/4 cup packed light brown sugar
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/4 teaspoon ground ginger
    • 1/8 teaspoon sal
    • 2 1/4 cups chilled heavy cream
    • 1 1/2 teaspoons pure vanilla extract, divide
    • Garnish: ground cinnamon (optional)
Equipment: 8 (8-ounce) glasses Sprinkle gelatin over water in a small saucepan and let soften 1 minute. Bring to a bare simmer, stirring until gelatin has dissolved. Whisk together gelatin mixture, pumpkin, brown sugar, spices, and salt in a large bowl.Beat 1 cup cream with vanilla until it holds soft peaks, then fold into pumpkin mixture gently but thoroughly.Spoon about 1/2 cup pumpkin mixture into bottom of each glass. Chill until set, at least 2 hours. Beat remaining 1 1/4 cups cream with remaining 1 tsp vanilla until it holds soft peaks. Dollop each with whipped cream before serving

It's funny we don't see a lot of pumpkin items except from Halloween through Christmas.  It is such a great ingredient.  I make, and eat the pumpkin bread quite often during the year.  I have added pumpkin puree to soups and chili.  You can't taste it but it adds fiber and vitamins.  It also thickens  soup or chili.  I bet it would do well to cut the acid in a pasta sauce.  And pumpkin ravioli is popular I bet adding it to lasagna or manicotti would be good.
I have yet to try the pumpkin fudge that is on this site and I have read many posts that indicate it is very good.

Besides the famous Libby's Pumpkin Pie, I also like to keep on hand (throughout the year) Pumpkin Spice Truffles!  Some people call them Pumpkin Balls but I like the sound of Truffles better.  They are really easy to make and my daughter loves to help, too!

Pum
pkin Spice Truffles


1 box yellow cake mix
1 can Libby’s pumpkin
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp allspice
1/8 tsp freshly grated nutmeg
3/4 cup water
1/3 cup vegetable oil
4 large eggs
~~~~~~~~~~~~~~
1 can cream cheese frosting
~~~~~~~~~~~~~~
chocolate candy melts
chocolate sprinkles (optional)

Beat everything together (ending with the eggs) and place in a 13X9” pan.  Bake according to the cake box for a 13 X 9" pan. Let cool completely on a wire rack for about an hour or two.  Crumble the cake apart in a bowl and add the can of cream cheese frosting. Using your fingers mix together until the cake holds together when formed into a ball.   Place the ball in a sealed container and refrigerate overnight.The next day, roll the mixture into balls of about a 2 bite size. This should make about 50 truffles. Place on cookie sheets lined with wax paper and freeze 1 hour. 

When ready to dip, melt the candy melts following the directions on the package. Using a toothpick, pick up one truffle at a time and roll around in the melted chocolate.  Place the truffle back on the wax paper lined cookie sheet.  If using sprinkles, scatter on while the chocolate is still wet.

Place in freezer for about 20 minutes to harden completely.  Enjoy!

For some reason I did not check this post until today but this recipe sounds great.  I usually am not a fan of the cans of frosting as they are so very sweet.  I wonder if the Philadelphia Cream Cheese brand of ready made cheesecake filling would work. It has about the same consistency but is not as sweet.

PUMPKIN ANGEL CAKE


ANGEL FOOD CAKE MIX----BETTY CROCKER 1 STEP IS BEST

30 OZ CAN LIBBY PUMPKIN MIX

1 TSP PUMPKIN PIE SPICE

1 TSP GROUND NUTMEG

MIX TOGETHER--
SPRAY 13X9 PAN WITH PAM, WIPE OUT EXCESS

BAKE 350 OVEN-----30-35 MIN.




TOPPING


12OZ COOL WHIP---LITE IS OK

1 SM CAN PUMPKIN

1/2 TSP PUMPKIN SPIE SPICE

3.4OZ INSTANT VANILLA PUDDING--SUGAR FREE IS OK


STIR ALL TOGETHER

TOP WITH CHOPPED PECANS

Gale, I actually made that pumpkin trifle about 5 yrs ago. My partner loved it and asked me to make one so that he could take to his family for the holidays. So I made one for his family and one for mine. The result being that it is now my holiday oblogation (LOL) to make this for his family. It truly is a great holiday recipe that is not only easy and fun to make, but it tastes great and looks beautiful. I think it's a great recipe to share with everyone.
