Yes like the Libby one but am going to make pumpkin bread too and pumpkin pudding.

I will make the Libby's pumpkin pie with the gluten free pie crust and I will make some pumpkin rolls for the DH and friends. Oh yeah, I also want to make some pumpkin fudge.

I am not a fan of the traditional pumpkin pie.  I don't like what ends up being a soggy bottom pie.
I have found this recipe to be the best of both worlds.
Pumpkin Pie Crunch.
1 Can pumpkin puree NOT pie filling
2 eggs
1 1/2 Cups Caration evaporated milk
1 1/3 Cup granulated sugar
1 Tb pumpkin pie spice
1/2 tsp salt
1 Package cake mix, I like a spice or carrot cake mix but yellow will work.
1 1/4 Cup chopped pecans
1 Cup butter, melted
Pre heat oven to 350 degrees F.
Grease a 13X9 pan
In a large bowl, stir together pumpkin, eggs, evaporated milk, sugar, salt and spice until smoothly blended.
Pour into prepared pan.
Sprinkle dry cake mix over the top of pumpkin mixture.
Sprinkle nuts over cake mix.
Drizzle butter over top of dry mixture.
Bake for 50 to 60 minutes or until set and golden.
Cool for at least 1 hour in pan on wire rack before serving.  Serve with whipped cream.  Store in refrigerator.

I have made this several times, I think next time I will mix butter and cake mix and nuts together and sprinkle over the top of the pumpkin mixture.  It will, I think be more like a crisp topping.  Doning it the way it is in my cookbook there are some spots that don't get moistened with the butter and remain a bit dry.  Very good though.  This is now my favorite "Pumpkin Pie"  Plus it serves 12 to 16 people where a pie may serve 6 or 8.
The pumpkin pie is on the bottom with a crispy, crumble topping.

I usually use Libby's Canned Pumpkin pie but this year I will try to be more daring and use a pumpkin.  So Scratch for me this year but I will be back to the canned next year if this doesn't work out.....Or Maybe sooner...LOL

With the cost of the pie pumpkin, you can't really use a carving type pumpkin, the effort to bake it until soft, cook it down a bit more to remove excess moisture it almost doesn't pay to make it from "scratch"  get the can of pumpkin puree, add your spices and get on with the recipe.  Not only that you will have consistant results.  Never can tell with a pumpkin how much moisture it will have.

I must make the pumpkin pie from the recipe on the Libbey's pumpkin. I exclude the cloves only because my family is not a big fan of cloves,but I add a little more cinnamon,I always recieve compliments on the pie.

I make a pumpkin custard pie it is not as heavy as a regular pumpkin pie.

Son wants sweet potato pie so will be doing that too. I hate soggy bottom crust too.
