Well, I found I have a can of pumpkin that is going to expire in June.  So, I was thinking that I want to try the Mini Pumpkin Whoopie Cakes!  At least I can experiment before Thanksgiving.&

Well, I found I have a can of pumpkin that is going to expire in June. So, I was thinking that I want to try the Mini Pumpkin Whoopie Cakes! At least I can experiment before Thanksgiving. Last summer I experimented making Oreo Fudge and it was a Christmas request! I'll keep you posted... Happy Easter VBB friends!

I think the whoopie pies are a great idea.
Make them a little oblong in shape and you could pass them off as either whoopie "eggs" or whoppie "carrots"
A little of the filling on the edge and place a little coconut tinted green.
I think it will make a great display for a dessert. Sprinkle a few jelly beans around them and you just might have a centerpiece for the table. The only problem would getting people to not eat them first. It is hard to not eat a whoppie pie!

What a great idea Cindy! Nikki, thanks for the ideas on how to make them holiday themed. I can see your mind is always working to come up with ideas for all of us.

Unfortunately I already have my Mom and my daughter bringing baked goodies for our Easter dinner or I would make the whoopie cakes as dessert.

Why not pumpking for Easter. It is a very nutritious thing to eat. I love the Thai Pumpking Soup that can be found on VBB.

Since you can get canned pumpkin, I too think it can be used year round. I just don't like to so as much with the oven when it is so hot.
