Wet-Bottomed Shoofly Pie

3/4 cup Flour
1/2 cup brown sugar
1/2 tsp cinnamon
1/8 tsp each nutmeg, ginger, and ground cloves
1/2 tsp salt
2 tablespoons shortening
1 egg yolk, beaten well
1/2 cup barrel molasses
3/4 cup boiling water
1/2 tsp baking soda

Piecrust dough for 9-inch pie

Combine flour, sugar, spices, and salt with the shortening. Work into crumbs with your hands. Add beaten egg yolk to molasses. Pour boiling water over soda until dissolved; then add to molasses mixture. Line a 9-inch pie plate with pastry and fill it with the molasses mixture. Top with the crumb mixture. Bake at 400 degrees until the crust browns, about 10 minutes. Reduce to 325 degrees and bake firm.

Every Shoofly Pie I have seen looked basically the same (first time I tried it was in Lancaster Pa. then Fla., & then Ga. or Tenn. ) just had a crumb topping & was served with a little vanilla ice cream on the side. It was so sweet, that I do not think I could eat it without the ice cream to help & 4 of us shared the slice. The pie did not look inviting, but we were young & in Lancaster & heard about the Pa Dutch cooking, so we tried a few items.

If this is a double crust pie, you could use an eggwash and sprinkle sugar on it before baking. Otherwise, perhaps a crumb topping.

I don't decorate outside of doing an apple design for vent holes. But my family loves to eat the pie and not much chance to appreciate the design since it is gone in the blink of an eye!!!

I use little cookie cutters in the shapes of leaves, apples etc. and cut out shapes from the left over pie crust dough. If the pie doesn't have a top crust bake it for 15 minutes and then add the cut outs to the top in any arrangement that you think looks appealing. If the pie does have a top crust add before baking.

Shoofly Pies are a plain not pretty on top pie.
I would serve it as is but have unsweetened whipped cream available to serve on the side. I suggest unsweetened because the pie is so sweet you really don't need any more sugar. And the whipped cream can be used too dollop on coffee or hot chocolate at the end of the meal.

I have been searching high and low for a pie recipe for nearly 25 years, and I finally found it. It is Wet-Bottomed Shoofly Pie. Because I had only eaten a very small piece when I was 7, I cannot remember how it was decorated on top. The pie is SO good, but it doesn't look very pretty "naked". Does anyone have any ideas? Jennifer, thank you so much for posting this recipe. My recipe for supposedly "wet bottom" pie is dry and I have wanted to find one that is truly a "wet bottom" pie. We used to be able to buy the pie when we lived in PA near the Amish community. No such thing down here in Dixieland.

Sorry that I don't have a suggestion for the decoration for the pie, other than whipped cream or ice cream.

I'm going to make a rhubarb pie for Easter. I just usually sprinkle my top crusts with cinnamon/sugar. I'll make decorative vent holes int he crust. Mom used to make an apple for that kind of pie, but generally just made a wheat head
