Does anyone have a 'traditional' pie crust recipe that includes lard, and also any tips for making this turn out spectacular! I'm having my MIL over for thanksgiving Dinner and she wants lemon meringue pie with homemade crust. . . Thanks for yourhelp!

A recipe is below. But I must tell you that I was watching an episode of America's Test Kitchen and they suggest that you use vodka/water mixture for the liquid. Their reasoning is you can add a bit more liquid, the dough will be easier to work with and in baking the vodka will evaporate out of the dough leaving it tender and flaky.
This recipe is from a book called "As Easy as Pie"
Basic All purpose Flaky Pie Crust
This will make one 2 crust 8 or 9 inch pie.
2 Cups All purpose flour, sifted
3/4 tsp salt
1/2 cup unsalted butter, chilled
3 Tb crisco, lard or other shortening
5-6 Tb ice water, (if you have a tendency to over handle the dough the suggestion here is to use part water and part lemon juice of vinegar or you could try the vodka mix....)
Combine dry ingredients with the cut up butter and shortening in a large bowl. With your fingers or pastry blender work it until it resembles rice.
Add your liquid, a few tablespoons at a time combine just until it comes together.
Turn the dough onto a piece of waxed paper, bring the edges of the waxed paper together to help form the mixture into a ball. Wrap the dough and refrigerate at least 30 minutes. Several hours or over night is better.

Hi Tina, the recipe that Nikki gave you above looks good.I lived next door to an old Hungarian woman who worked in a bakery and she always used a combination of butter and lard.I can honestly say she made the best, flakiest pie crust I have ever seen.I have followed the same recipe with excellent results.

Hey, that is NOT homemade crust, although purchased crust is sometimes better than some people's homemade crusts.
I always use crisco and the secret is not to use too much water ( I haven't a clue as to how much to use because I just put it in until it is right) and don't handle the dough more than necessary as it makes it tough. Be sure the water is ice cold. I keep my crisco in the fridge as cold fat works better also.
I put in 1 teaspoon of sugar for each cup of flour.

I never measure anything either but I keep my cisco in the frige also. It seem to work better when it is cold. and always use
ice clod water.Good luck and have a great Thanksgiving.

After years of trial and error, I finally mastered my Mom's pie crust. And it uses lard, though I don't tell anyone because they get disgusted with this thought. Then last year my older sister told me she started using Trader Joe's frozen crust, and her family liked it better than our family recipe. So I tried it and my family gives it a thumbs up too. It's sure a lot easier and less messy than making my own, and if those who are eating it like it better, why fight it!

Verlee, Thanks for the advice. I need to go to Trader Joe's for some extra
virgin olive oil, so I will try their frozen crust. A couple of months ago, if I
remember this correctly, you said that you also liked one of their choc.
candy bars, but I don't remember which one. Hopefully you will see this

My Husband Aunt used to keep house for a family and she also cooked for them she was pretty well known in her area for making the best pie crusts.On one of our trips to see his family in Pa.we were talking about her pie crusts and I asked her for her famous pie crust recipe.She gave me the recipe and I was so excited to get it.After our conversation she added she is doing something new.She whispered in my ear,I now buy the crusts in the dairy case.Why make them when you can buy them just as good? We both started laughing.This was this dear sweet lady who was known for her pies! It depends on my mood or time allowed as to what I do ,buy or make from scratch.:)

Nancy, thanks for the info on the pie crusts. I have used Pet Ritz for years and I have always likes the results. That is when I don't make my own....LOL.
I do make my own crumb crusts and nut crusts. I have fun blending flavors to go with the filling.

Hi Carol - Boy, you have good recall! I buy Simply Lite Dark Chocolate with Almond bars from Trader Joe's. There's no sugar added, no trans fat, gluten free, and low carb, AND I think they taste good!!!

to choc. lol lol I love Trader Joe's but they are always so busy that it is hard to
shop there. They don't have a very big parking lot either!! I love looking thru

I didn't know that you could still buy lard. My pie crust is made with Crisco shortening, but I guess you could use lard too.

2 cups of all-purpose flour
1 cup of Crisco Shortening
1/2 tsp salt
cold water (about 1/2 to 3/4 cup)

Mix flour, salt, and shortening until the flour looks like small peas. Add ice cold water a little at a time until all the flour is combined and feels soft to the touch. Don't over mix because it will get tough. Refrigerate for a while before rolloing out.

Hi Angela,they used to carry lard in the meat department,not anymore.I was buying some shortening and there it was on the shelf next to the shortening.
