peppermint patties candy

I have been trying to find a recipe for the  peppermint patties candy just like the york peppermint patty. I love to make all my own candy at christmas  with a lot of requests for the patties.I seen one that you add a baked potato mashed up but the shelf life cant be very long for that one .does anyone have a recipe for simple peppermint patties.     REN

Hi Becky -- I've never heard of that recipe .... but I sure want to!!  I'll be waiting along with you.

The candy made with a chunk of cooked potato is a part of my childhood Christmas..... we called it Potato Candy - just a chunk of boiled potato mixed with as much powdered sugar as it will take - That amount is more than you can imagine!  The resulting 'glob' is spread out flat then spread with peanut butter, rolled up and then sliced.  Makes many small pin wheels.

All you do is add peppermint extract (1/4 teaspoon) to the potato and confectioner sugar mixture, form patties and let crust sightly.  Then dip in melted dark chocolate.    I have done these with milk chocolate and I prefer the dark where hubby prefers the milk chocolate ones.  I also make the marshmallow Easter eggs.  Oh what fun!
