When my boys were little, I used a quick recipe for a chocolate cake baked in an 8 x 8 pan. I split it and filled it with softened ice cream, then wrapped it and put it in the freezer to have a desert availble in a moment's notice. I usually did two at a time, one to stash and one to devour immediately.
I had just about forgotten doing this-- time to do it again!

i really like this idea--------------for me -----------i would also cut into individual servings for the freezer----------------------homemade-------------ice cream sandwiches-----------------yummy yummy yummy---i've got love in my tummy

Sounds good! Whenever I make brownies, I always serve them with ice cream. I think ice cream jazzes up any cake or brownie. Also, bake your favorite cookie, put some ice cream between two, and you have a very quick dessert!

I've never made an ice cream cake either. I remember my mom making one, but I don't have a recipe for it. Now, we usually buy one if we want one.

I used to use the 9x 9" pan recipe for brownies but bake it in a 9x13 pan with lots of nuts. When it was done and cold I sliced it into three 9 x 4+" slices. I let a half-gallon carton of ice cream set and softena bit. I put one 9x4" slice on a platter and covered that evenly with thick slices of ice cream. Top that with another brownie slice and cover that with ice cream slices. Top that with the last slice of brownies.
Stick it in the freezer to harden. Make a big bowl of chocolate whipped cream - real whipped cream - and use that to frost the brownie-ice cream cake. Sprinkle with chopped pecans. Stick it back into freezer. What a MAGNIFICIENT treat.

Even though the store bought ice cream cakes are a little expensive, I have bought them for some special occasions. Kroger has their own store brand that is a little cheaper. Or at least it was in the past.

Ice cream and chocolate cake (or brownies) ALWAYS go together!! Also, take two cookies, put ice cream between them, put them in the freezer.....and.....you always have a "go to dessert"! Try it.....you'll like it!
