I don't do anything special other than carve 2 pumpkins.....hubby likes the seeds roasted. Here's the recipe that I use: Roasted Pumpkin Seeds 2 cups fresh pumpkin seeds 3 tablespoons butter, melted 1 teaspoon salt 1 teaspoon Worcestershire sauce Line a 15x10 baking pan with foil and grease foil. In a small bowl, combine all ingredients; spread into prepared pan. Bake at 225 degrees for 1 ½ hours, stirring occasionally. Increase heat to 325 degrees. Bake 5 minutes longer or until seeds are dry and lightly browned. Serve warm, or cool before storing in an airtight container. Yield: 2 cups.

This is great! I was just thinking about making Roasted Pumpkin seeds and couldn't remember how I did it...now you just posted it!
