Fudge For All.....Recipes needed!!!!

So here we are.  Thank you Nancy for this great idea.
All fudge recipes are welcome even ones where you have to monitor temperatures then stir like crazy until your arm drops off.

This has been a favorite of mine, remarkable since I am not a real fan of white chocolate but I do like the mixture of the fruit and nuts.  The white chocolate makes this look so pretty.  I am sure this could be done with semi sweet or dark chocolate as well.
Trail Mix White Fudge
1/2 Cup dried cranberries
1/2 Cup dried apricots cut into 1 inch dice
1/2 Cup roasted pistachios, chopped coarsely
1/2 Cup crystallized ginger diced into small bits
2/3 Cup sugar
1 5 ounce can evaporated milk
1/4 tsp salt
8 ounces white chocolate chips, or bar chopped
1 1/2 Cup miniature marshmallows
Spray 8 inch square pan or line with parchment or foil, allow some  to hang over on 2 sides.
Place cranberries, apricots, pistachios, and ginger in a bowl and set aside
In a heavy saucepan over medium heat bring sugar, milk and salt to full rolling boil. 
Simmer stirring constantly until mixture thickens and starts to turn a pale caramel color, about 5 minutes.
Remove from heat and stir in marshmallows and chocolate.  Stir vigorously until marshmallows melt.  Pour mixture into bowl of fruit and nuts, continue to stir until fruit and nuts are evenly distributed into the mixture.
Press fudge into pan and cool until firm, about 1 1/2 hours.
Remove from pan and cut into squares, about 42 pieces.


Here is a pretty simple one..I think this is the first fudge I helped my grandson make many years ago
Foolproof Dark Chocolate Fudge
3 Cups semi sweet chocolate chips (I would guess the dark chips would be great in this as well)
1 can, 14 ounces Sweetened Condensed milk..NOT evaporated
dash of salt
2 teaspoons vanilla extract
1/2 to 1 Cup of nuts...if desired
Line a 8 inch square pan with foil or parchment
In a heavy saucepan over low heat melt chips with condensed milk and salt.
Remove from heat and stir in nuts and vanilla extract.
Spread evenly in prepared pan.
Chill for 2 hours or until firm.
Lift fudge out of pan and cut into squares.  Makes about 2 pounds of fudge.

Thanks Nikki - for even more recipes for fudge.  I think this site might have a dozen and I've tried them all.
Now I'm going to try yours!!


Isn't it funny that I love making that time-consuming divinity and the candied nuts but I've NEVER made that sort of fudge.

This is from my 1961 Betty Crocker's New Picture Cook Book........

Old-fashioned Chocolate Fudge
2 cups sugar
2/3 cup milk
2 sq. unsweetened chocolate (2 oz) or 1/3 cup cocoa
2 tbsp. light corn syrup
1/4 tsp. salt
2 tbsp. butter
1 tsp. vanilla
1/2 cup broken nuts
Combine sugar, milk. chocolate or cocoa, corn syrup and salt in
saucepan. Stir over medium heat until chocolate melts and sugar
dissolves.
Cook to 234* or until a little dropped in cold water forms a soft ball.
Stir occasionally. Remove from heat. Add butter.
Cool to lukewarm WITHOUT STIRRING. Add vanilla. Beat until
thick and no longer glossy. Quickly stir in nuts. Pour into buttered
8" or 9" square pan. When set, cut into squares.
Makes 36 (1 1/2") pieces.

I don't have the recipe mom used when we were kids but this is not it.
I remember that it was never stirred. Mom constantly cleaned the inside
of the saucepan with a fork tied with damp rags.  The boiling, bubbling mixture
could not be allowed to climb the pan.

I make the Fantasy Fudge recipe all the time, including 2 batches just yesterday, one with pecans, one without. I also substituted Nestles Dark Chocolate Chips in the pecan batch. I now have a new favorite - love that dark chocolate.

NOTE: I do use the Microwave recipe and it never fails me. I also put this recipe in a 9 x 13 pan, to get more servings!!!

Hi Verlee -- On the recipe's microwave instructions ........... do you 'wave it a total of 5  minutes or a total of 10 1/2 minutes?  Embarassed
I get a bit confused by the directions.  Thanks

that's the recipe i use-----------------but i use chocolate chips (12 oz )           whatever flavor              and walnuts

i may try the fudge in the m.w.
and nancy   i think it would be 11 1/2 mins if you start w/ the butter

Christmas Fudge

  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1/2 stick butter
  • 1 can (5 oz.) evaporated milk
  • 1 package (12 oz.) semisweet chocolate chips
  • 1 Symphony chocolate bar (7.5 oz.) with almonds and toffee bits
  • 1 jar (7 oz.) marshmallow creme
  • 2 teaspoons vanilla extract
  • 1 cups coarsely chopped walnuts or pecans
Heavily butter a 9-x-13-inch baking pan and set aside.Place the sugar, salt, butter, and evaporated milk in a large, heavy saucepan. Bring to a boil over medium-high heat, stirring constantly. When the mixture comes to a boil, reduce heat to medium. Boil gently for 8 to 9 minutes, stirring frequently to make sure the bottom doesn’t scorch. Stir in the chocolate chips, chocolate bar, and marshmallow creme until the mixture is well blended.Stir in the vanilla extract and nuts. Pour the mixture into the prepared pan. Cool at room temperature for several hours, or until set.Cut into one-inch squares. Store in an airtight container for up to two weeks.

Fudge   1. Mix in a heavy 2 qt. saucepan, 2 cups sugar; 2/3 cup evaporated skim milk, (1/3 cup of water and 1/3 cup of evaporated milk if you don’t have evaporated skim milk), 12 regular marshmallows, ½ cup butter and a pinch of salt. 2. Cook, stirring constantly over medium heat to a boil (mixture will be bubbling all over top).  Boil and stir 5 minutes more.  Take off heat. 3. Stir in until completely melted 6 oz. package (1 cup) chocolate morsels (semi-sweet).  Site in 1 cup chopped nuts and 1 teaspoon vanilla.  Spread in 8 inch buttered pan. Cool to cut.

It's 10 1/2 min. total. You stir after the first 3 minutes, cook 2 more minutes, stir, cook 3 more minutes, stir, cook 2 1/2 minutes. While it sets for 2 minutes, I usually drop a bit into cold water to see if it's hit the soft ball stage. If you think it's not soft ball, cook it another minute or so. I did find that if you overcook, the fudge gets crumbly and hard to cut.

Thanks Verlee ........ I find that astonishing!!  That fudge is cooked longer than my peanut brittle --
which has to go to hard ball.
I think there's a LOT about such stuff that I don't know.

I have never done a lot with my microwave.  In my old house it was in such a bad location it wad a pain to use...literally and figuratively.
The microwave I have now is located above the stove and I would have reservations making fudge or anything else that would be like napalm.
I am not even comfortable melting chocolate chips in the microwave.  I think I have more control on the stovetop.
I suppose I should just take the step and try one of the microwave fudge recipes that I find here.  I think I recall a peanut butter one that was done in the microwave.
I guess in the last year or so I have done more than I have in the past when it comes to cooking so this will be the next step.

PEANUT BUTTER FUDGE   


Ingredients
  • 4 cups white sugar
  • 1 cup light brown sugar
  • 1/2 cup butter
  • 1 (12 fluid ounce) can evaporated milk
  • 1 (7 ounce) jar marshmallow creme
  • 1 (16 ounce) jar peanut butter
  • 1 teaspoon vanilla extract

Directions

  1. Grease a 9x13 inch baking dish.
  2. In a medium saucepan over medium heat, combine sugar, brown sugar, butter and evaporated milk. Bring to a boil, stirring constantly, and boil for 7 minutes. Remove from heat; stir in marshmallow creme until well incorporated and melted. Stir in peanut butter and vanilla until smooth; spread in prepared pan. Let cool before cutting into squares.
