Easter Treats

HAPPY EASTER (TOMORROW) TO EVERYONE!!!

I just wanted to share that yesterday I made my desserts for Easter. And of course I had to sample them today, to make sure they are edible!!! I made the Raisin Apple Bread Pudding recipe found on this site, and I must tell you I was so-o-o thrilled with the results. It reminds me of the bread pudding my Mom's aunt used to make w-a-a-a-y back when I was a child. I also made carrot cake, using a recipe passed onto me about 40 years ago, that I had not made in quite awhile. It too is pretty awesome. So I'm good for at least the dessert portion for tomorrow. lol

When I got up this morning and looked out the window, it looked as if it was snowing.  OH NO!!  It was not snow......the wind was blowing the white petals from the trees that stand in front of all the condos in our cul-de-sac.  It is after Noon now, and most of the blossoms are gone.  What a shame....it looks just beautiful when all of the trees are in bloom.

Verlee...I may want your recipe for carrot cake.  I made one yesterday for the first time.  I got the recipe from All recipes and not sure about it.  I have not tried it yet.  I also made a Cream-cheese frosting that I found on the site and I am not thrilled with the texture of it.  The taste is alright from the bit that got on my finger.  But it seems very soft.
will let you know tomorrow..

Verlee, I love carrot cake but haven't made one in a long time.  Also my mother used to make bread pudding a lot.  i think maybe that was an "old timey" thing to do.  As kids we loved it when she made chocolate bread pudding.  She'd use some leftover chocolate cake in it along with the bread.  No recipe of course.

I made a Texas Sheet cake, pumpkin pie and 3 kinds of cookies.  Oh and left over pie crust thingy's which are the best!!

Check under "What are you baking" under that "Desserts".
the carrot cake I made did turn out really pretty good.  I think the only thing I would do next time is grate the carrots a bit more.  I use the grater on the food processor but I think it would have been better if the grate was a bit finer.
the frosting I made also was good so I have no complaints about the carrot cake..other than it is HUGE the recipe called for 10 inch pans I used 3 9 inch pans.  I probably should have made it in 2 9 inch pans then split the layers.  The 3 layers were to thin to split and when stacked the cake was so tall I could not put the cover on my cake plate over it.
