 I know that this is a little early,but if we could all come up with Easter and Lent recipes and get a head start,I think it would be fun.Something to look forward to SPRING!

Congrats.on the anniversary, in another post I saw that someone else was married over 40 years, if all is well, we will have our 45 th anniv. this year. Maybe the saying "the way to a man's heart is through his stomach" really IS true, LOL.

 I miss dyeing eggs with my grandchildren. We would go outside on the picnic bench and they could make as much of a mess as they wished and no one got angry and we had a ball!

I have never tried making the Pumpkin Roll Cake but I think I will try it for Easter and rather than make it pumpkin I think I will do a white cake and use a Raspberry filling and Glaze the cake with a Chocolate Ganache.  I think it will look "Springy" and taste really good.  If it does not turn out turning it into a "Trifle" is not much of a stretch.
for Easter dinner Lamb or if I get thumbs down on that then lasagna.

Not sure how you would get a green or purple.  Not sure if you mean the dyes you get don't color the eggs well or if they in fact smell bad.  But I have not been happy with the last several years of pre made packages of dye.  I like the "old stand by" of food coloring and a vit of vinegar in the water.  Takes a while for the egg to absorb some of the color, and in some cases it makes for an interesting variety of Deviled Eggs or a bizarre egg salad sandwich.

Elsa - Do you have the recipe for the homemade chocolate covered marshmallow eggs?  It's sounds like something I would like to try this year, but I would try to make them early enough to make sure they turn out.  Thanks in advance for your posting the recipe.

My Mom felt the very same way about mayo.  She always used Miracle Whip and it's what my husband and I prefer to use.  Thanks for the laugh!

Mayo?  MAYO?!!!???     I would never, never put ~shudder~    MAYO  in a deviled egg. The correct thing to use is Miracle Whip! I think it's against the law to use mayo in  deviled eggs.

Usually have ham. kolbassi sausage, smoked slab bacon, Easter cheese, and hard boiled eggs with a mixture of grated pickled beets and horseradish for a condiment.

I will post it!  What I like about this recipe, I seperate it into 3 bowls and I add flavoring!  Yum Yum!!

Here is the recipe for the butter cream candy!

3 oz cream cheese
1/2 cup butter
4 cups 10X sugar
1 1/2 tsp. vanilla

Mix the above ingredients and chill for 1 hour.  Roll 1 inch balls and chill overnight; then coat with your favorite chocolate.  Chill again.

When I make this, I divide into 3 part and add flavoring; see below:
1/2 tsp. Brandy
1/4 tsp. Mint
1/4 tsp. Orange
1/4 tsp. Strawberry

Now, if you like it stronger tasting, then just add more flavoring.

You get about 3-4 dozen (depending on size)

Now - please, would you tell me the way you do the "coat with favorite chocolate" part.
My favorite checolate would be anything available :-) but how do you do it?
I've coated balls with chocolate but I've never made it pretty - or FAST

Nancy, an easy way to dip things in chocolate without going through the trouble of tempering the chocolate is to melt 3/4 of the chocolate first.  Once the chocolate has melted and is smooth add the rest of the chocolate and stir it in.  Much easier if all the chocolate is chopped very small. 
Adding the chocolate to the melted chocolate will bring the temperature down so you have to work pretty quickly. 
Tempering chocolate can be tricky and requires taking the temperature and then keeping it at a specific temperature.  Doing it the way I suggested you eliminate a lot of that but you can't take a lot of time.
If you are going to do the balls melt the chocolate in a bowl.  When I do pretzel rods I use a 1 Quart Mason Jar of a tall water glass.

Good luck.  the Butter Cream Candy sounds luscious. I think Amaretto or almond flavored would taste great.  Chopped cherries would taste good added to the mix. A good vanilla would taste very good as well.

I never made candy that I needed to coat with choc. in my life until I made these.  This is what I done!  I got good  coating choc. (small pieces) and melted it very slowly over heat and always keep stirring.  I took it off the heat, coated a few and then put the choc. back over the heat and I just repeated those steps until all the balls where coated.  They got wonderful!

Now I have seen choc. bark that can be used for coating but I never used it.  I don't like my choc. waxy tasting!  It's a little more expensive using a good melting choc. but it sure pays off in the end with the taste and looks!
