Here is a very unusual "cake" for anyone who LOVES coconut and pecans. Vanilla Tea Cake 1 Cup Butter NO margarine please 2 Cups sugar 6 Eggs 1 package, 12 ounces vanilla wafers, ground to a fine crumb 7 1/2 ounces coconut (pulse this a bit to make it less "stringy" if you want) 1/2 cup milk 1 Cup ground pecans Pre heat oven to 300 degrees. Grease and flour a Tube pan or Bundt pan. Mix butter and sugar in bowl of electric mixer, scrape down sides. Add eggs one at a time, beat between additions. Mix in vanilla wafers and milk, mix well. Add remaining ingredients, mix well. Pour into prepared pan. Bake 2 hours. The 2 hour bake time is not an error. You could probably make this cake with any type of cookie. A lemon would probably be very good and would go with the coconut and pecans.
