You can do the bars. Just increase the filling a bit, I would do 1 1/2 the measurements so the filling will be a bit thicker but it will not take twice as long to bake. The other thing you might want to do is increase the nuts by 2 this way you get more of the nuts for the filling and crust. After all the nuts really are the best part of a pecan pie. Your other option look for a recipe for a cookie called Pecan Tassie. This is made in a little mini muffin pan can be removed and eaten in 1 bite tastes just like a pecan pie. Or another thought make your pies but make them in regular muffin tins, with or without a liner. Place a bit of your crust in the pan then a bit of the nuts and your filling and bake. Each little pie would probably be enough for 1 very dedicated pecan pie lover or it could be split. Good luck I hope all these ideas help.
