How about each VBB member post 1 recipe of there favorite Christmas Cookie.  By doing this, we sure can get a great collection of recipes and we would also get some new ones.

Great!  I am so glad to see positive responses to the idea.  I think I will post one of my Mom's favorite cookie that she only made a Christmas time!  I will look for it and post it!

This will be fun and I hope we get a lot of recipes!

I would do this but am not sure where to post it to...Would you look for Christmas Cookie Exchange and then just type the recipe in this block?

You would post your recipe right here!  I started this discussion so we could share Christmas cookie recipes...I hope you join in!  I must get my Christmas cookie recipes out!!

I love this idea!  I will find one of my favorites and post it also.  Since I haven't been able to locate the "Swapped Recipes" (am probably looking in the wrong place for them), perhaps VBB could have a special spot for the Christmas Cookie Exchange.

ICE CREAM SUNDAE COOKIES

2 1/4 cups flour
1 tsp baking soda
1 tsp salt

8 sugar ice cream cones (2 cups) broken into bits
1 cup semi-sweet chocolate morsels
1 cup white morsels
3/4 cup maraschino cherries - (10 oz. jar) pat dry and chop into small pieces

1 cup (2 sticks) butter
3/4 cup sugar
3/4 cup packed brown sugar
1 tsp vanilla
2 eggs

Heat oven to 375
Mix flour, soda and salt together in small bowl. 
Beat butter, sugar, brown sugar and vanilla until creamy. Add eggs one at a time
while beating.  Gradually add flour mixture.
Stir in cones, morsels and cherries.
Drop by rounded tablespoon onto ungreased sheet.  *Bake 9 - 11 minutes*
until golden brown.  Cool on sheet for 2 minutes and move to rack. Makes 5 doz.

* I bake for just 8 minutes.
I sometimes add macadamia nuts

CHOCOLATE COVERED CHERRY COOKIE

COOKIES

1/2 CUP SUGAR
3/4 CUP BUTTER - SOFTENED
1 TEAS. VANILLA
1 EGG YOLK
1 1/2 CUPS ALL PURPOSE FLOUR
1/4 CUP UNSWEETENED COCOA

FILLING

1/4 CUP BUTTER SOFTENED
1 TABLESPOON BRANDY OR 1/2 TEAS. BRANDY EXTRACT
1 CUP POWERED SUGAR
36 MARASCHINO CHERRIES WITH STEMS DRAIN ON PAPER TOWELS

TOPPING

1/2 CUP NESTLE SEMI-SWEET CHOC. CHIPS
1 TEAS. OIL

1. PREHEAT OVEN TO 375*.  IN A LARGE BOWL, COMBINE SUGAR, 3/4 CUP BUTTER, VANILLA AND EGG YOLK; BEAT UNTIL LIGHT AND FLUFFY.

2. LIGHTLY SPOON FLOUR INTO MEASURING CUP, LEVEL OFF.  ADD FLOUR AND COCOA; BEAT UNTIL WELL MIXED.  SHAPE ROUNDED TEASPOONS OF DOUGH INTO 1 INCH BALLS; PLACE 1 INCH APART ON UNGREASED COOKIE SHEET.  WITH INDEX FINGER, MAKE INDENTATION IN CENTER OF EACH COOKE.

3. BAKE AT 375* FOR 7-9 MINUTES OR UNTIL SET.  IMMEDIATELY REMOVE FROM COOKIE SHEETS; PLACE ON WIRE RACKS.  COOL 10 MINUTES OR UNTIL COMPLETELY COOLED.

4. MEANWHILE, IN MEDIUM BOWL, COMBINE ALL FILLING INGREDIENTS EXCEPT CHERRIES; BEAT UNTIL SMOOTH.

5. SPOON ABOUT 1/2 TEAS. FILLING INTO EACH COOLED COOKIE.  PRESS CHERRY INTO FILLING.

6. IN A SMALL SAUCEPAN, COMBINE CHOC. CHIPS AND OIL.  COOK OVER LOW HEAT UNTIL MELTED, STIRRING CONSTANTLY.  SPOON OR DRIZZLE MELTED CHOC. OVER CHERRY ON EACH COOKIE.  LET STAND UNTIL CHOC. SETS.

Date Pinwheels - an old fashioned cookie that my family loves! 

1 8 oz pkg pitted/chopped dates            2 cups brown sugar
1 cup water                                          2 eggs
1/4 cup sugar                                       3 1/2 cup flour
2 tsp lemon juice                                  1/2 tsp baking powder
1 cup finely chopped pecans                   1/2 tsp salt
1 cup butter                                          1/4 tsp baking soda


In saucepan combine dates, water, sugar and lemon juice.  Bring mixture to a boil, reduce heat and simmer for about 10 mins, stirring occasionally.  Stir in chopped nuts.

Cream butter, brown sugar and eggs until light and fluffy.  In separate bowl, combine flour, baking powder, salt and baking soda, stirring to blend.  Add dry ingredients gradually to wet creamed mixture.  Beat until just blended.  Divide dough into three portions.  Wrap in saran wrap and chill until easy to handle.

Between sheets of waxed paper, roll each portion into 12 x 8" rectangle.  Remove top wax paper and spread rectangle with about one-third of the filling.  Starting at 12" side, lift edge of waxed paper.  Peel paper off of dough as it is rolled, jelly-roll style.  Repeat with remaining dough.  Wrap rolls in waxed paper and refrigerate for several hours or overnight.

Preheat oven to 350 degrees.  Cut each roll into 1/4-1/3 inch slices and place 1" apart on greased cookie sheet or on parchment lined sheet.  Bake 10-12 minutes, cool on rack.

Pumpkin Bread
  • 2 1/2 cups Flour
  • 2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 1 small box instant lemon pudding mix
  • 1 small box instant butterscotch pudding mix
  • Chopped nuts (optional)
  • 1 15oz can solid pack Pumpkin
  • 2 cups Sugar
  • 1 1/2 cup Vegetable oil
  • 5 eggs
Pre-heat oven to 350 degrees.  Grease small loaf pans (this recipe is for 16 small pans, approx 3"x5")

In a separate bowl, mix together all dry ingredients.

Mix Pumpkin, Sugar, Oil and eggs, beat until smooth.  Stir in dry ingredients.

Bake 20-25 minutes.

Cool, then wrap each loaf in pretty colored Saran wrap, tie with ribbon and decorate with a small ornament stitched on felt and cut out.  Give away as gifts.
