Date Pinwheels - an old fashioned cookie that my family loves! 1 8 oz pkg pitted/chopped dates 2 cups brown sugar1 cup water 2 eggs1/4 cup sugar 3 1/2 cup flour2 tsp lemon juice 1/2 tsp baking powder1 cup finely chopped pecans 1/2 tsp salt1 cup butter 1/4 tsp baking sodaIn saucepan combine dates, water, sugar and lemon juice. Bring mixture to a boil, reduce heat and simmer for about 10 mins, stirring occasionally. Stir in chopped nuts.Cream butter, brown sugar and eggs until light and fluffy. In separate bowl, combine flour, baking powder, salt and baking soda, stirring to blend. Add dry ingredients gradually to wet creamed mixture. Beat until just blended. Divide dough into three portions. Wrap in saran wrap and chill until easy to handle.Between sheets of waxed paper, roll each portion into 12 x 8" rectangle. Remove top wax paper and spread rectangle with about one-third of the filling. Starting at 12" side, lift edge of waxed paper. Peel paper off of dough as it is rolled, jelly-roll style. Repeat with remaining dough. Wrap rolls in waxed paper and refrigerate for several hours or overnight.Preheat oven to 350 degrees. Cut each roll into 1/4-1/3 inch slices and place 1" apart on greased cookie sheet or on parchment lined sheet. Bake 10-12 minutes, cool on rack.
