I found the other Muffin Recipe I was looking for. Pineapple Coconut Crumb Muffins Crumb Topping 1/3 Cup flour 1/3 Cup flaked coconut, chopped 3 Tb granulated sugar 3 Tb finely chopped roasted unsalted macadamia nuts 3 Tb butter softened Muffin Batter 1 1/3 Cup flour 1/2 Cup granulated sugar 1 1/2 tsp baking powder 1/2 tsp salt 1/2 Cup flaked coconut, chopped 2 Large eggs 1/2 Cup vegetable oil 3 Tb unsweetened pineapple juice, reserved from canned pineapple 3/4 Cup drained canned unsweetened crushed pineapple Pre heat oven to 375 degrees F. Line a 12 cup regular muffin pan with papers, or grease with non stick spray TOPPING: In a small bowl combine all ingredients until mixture resembles coarse crumbs. MUFFINS: In medium bowl, combine flour, sugar, baking powder and salt. Whisk together until blended, stir in coconut. In medium bowl, whisk eggs until lightly beaten. Gradually whisk in oil until blended. Stir in pineapple juice. Add egg mixture to flour and stir just until combined. Fold in pineapple. Spoon batter into muffin pan, filling 2/3 full. Crumble topping over batter. Bake 20 to 22 minutes or until a toothpick comes out clean. Let cool in pan 5 minutes, remove from pan and cool on wire rack. (If you use jumbo muffin tin increase bake time by 10 to 20 minutes, check after 30 minutes)

Nikki, that recipe sounds great. Coconut and pineapple are 2 of my favorite things.
