If I am eating a muffin, I prefer it not be quite so sweet as a cupcake.  No icing.  Probably not even a glaze.  But I do like the ones with fruit or cinammon if that helps you any.  Are you looking for "tasters"?  LOL

A "Muffin Meal" would be the way to go for a lunch.
The muffin would be a basic muffin with "add-ins" you could do a cornbread muffin with cheddar cheese and jalapeno peppers and some chorizo sausage.  A "taco muffin" with taco flavored beef, some onion and cheese.  A "Pizza muffin" with mozzarella cheese, sausage, green peppers and onions.
Dessert Muffins with all sorts of goodies mixed in.
Think of it as Cold Stone Creamery of the Muffin world.
You could have a set number of standard flavors then everyday have a special.
You could also offer soup or chili if you wanted to get into more of a cafe type of set up for lunches.  You could still keep short hours that would be fairly profitable, open by 5am and close by 2pm.

I found the other Muffin Recipe I was looking for.
Pineapple Coconut Crumb Muffins
Crumb Topping
1/3 Cup flour
1/3 Cup flaked coconut, chopped
3 Tb granulated sugar
3 Tb finely chopped roasted unsalted macadamia nuts
3 Tb butter softened
Muffin Batter
1 1/3 Cup flour
1/2 Cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 Cup flaked coconut, chopped
2 Large eggs
1/2 Cup vegetable oil
3 Tb unsweetened pineapple juice, reserved from canned pineapple
3/4 Cup drained canned unsweetened crushed pineapple
Pre heat oven to 375 degrees F.
Line a 12 cup regular muffin pan with papers, or grease with non stick spray
TOPPING:
In a small bowl combine all ingredients until mixture resembles coarse crumbs.
MUFFINS:
In medium bowl, combine flour, sugar, baking powder and salt.  Whisk together until blended, stir in coconut.
In medium bowl, whisk eggs until lightly beaten.  Gradually whisk in oil until blended.  Stir in pineapple juice.
Add egg mixture to flour and stir just until combined. Fold in pineapple.  Spoon batter into muffin pan, filling 2/3 full.  Crumble topping over batter.
Bake 20 to 22 minutes or until a toothpick comes out clean.  Let cool in pan 5 minutes, remove from pan and cool on wire rack.

(If you use jumbo muffin tin increase bake time by 10 to 20 minutes, check after 30 minutes)

Nancy, in my opinion, a cupcake is like cake, just baked in a muffin pan.  it is sweet and cake-like.  A muffin would have much less sugar and fat.  The things most bakeries sell as muffins are really cupcakes, I think.  They are sweet so people like them.
When I make muffins I never use more than 1/3 cup of sugar to 2 cups of flour, sometimes less sugar depending on what else is in the muffin.

Nikki, that recipe sounds great.  Coconut and pineapple are 2 of my favorite things.

 I baked for a local family owned deli for a couple years,Our best selling muffins were raisin bran,banana nut and cranberry nut.Donuts,bagels and all butter croissant were also baked daily .Peanut butter,chocolate chip,butter cookies,brownies,blondes and peanut butter thingies which were named by the customers.They were peanut butter cookies baked in mini and regular sized muffin tins and then when these cooled a large dollop of chocolate frosting was piped through a pastry bag in the center of each.There were brownies and blondes. baked pies and bread also.Just to name a few and a few flavored coffees along with reg and decaf,our private blend and tea.I wish you much success with your new business. The weather has a Fall nip in the air today.  Perfect for baking!  I am looking at all these muffin recipes trying to decide which one I want to try first!  The all look wonderful.

Good luck with your business.
There are a plethera of muffin recipes-VBB, allrecipes.com, southern living, better homes and gardens, etc.
Remember your flavor enhancers are salt and vanilla.
If you have a recipe without salt or vanilla add a pinch of salt and a half teaspoon of vanilla-makes all the difference in the world.
