Betty Crocker has a simple and easy boxed blueberry muffin. I just made them this morning for breakfast, but I am sure you can find more by searching VBB recipes.

If you have any favorite quick bread recipes like Pumpkin, Banana-nut, Cranberry-Orange, Lemon-Blueberry, etc. you can make them into muffins instead of bread.  Good luck!

mix 1 can 100% pumpkin with any flavor box cake mix and spoon into muffin pans. bake according to box and voila! don't add anything else, just the mix and pumpkin, better for you than regular muffins and they taste amazing. i like to use spice cake mix or devil's food cake. if you want to get creative try putting a spoonful of cheesecake filling on te top of the muffins before you bake them. good luck!

I got this recipe from a restaurant not far from my house.  Mostly I think of it as a breakfast place but they serve all day and they always have a basket of great breads for the table.  Carrot bread, banana bread as well as the regular breads.  But the muffins they have are amazing.  This muffin is a Buttermilk Spice.
Buttermilk  Spice Muffin
Muffin:
1 Cup Sugar
1/2 Cup butter or margarine
3 eggs
2 1/2 Cups flour
2 tsp baking soda
1 tsp nutmeg
1/2 tsp cinnamon
3/4 Cup PLUS 1 Tb buttermilk
Topping:
1/2 Cup sugar
1 Cup finely chopped walnuts
1/2 tsp cinnamon
1/2 tsp nutmeg
Pre heat oven to 375
Grease muffin tin, or use paper liners.
In bowl of mixer cream butter and sugar.  Add eggs and beat 1 minute longer.
Sift dry ingredients into separate bowl.
Add flour mixture to mixer bowl at low speed.  To avoid lumps add dry and wet ingredient alternately in batches. Start and end with flour.
NUT TOPPING:
Combine ingredients in bowl, set aside.
Fill muffin tins 3/4 full. Top with a rounded tablespoon of the nut topping.
Bake 20 to 25 minutes or until a tester comes out clean.
This recipe will make 12 regular size muffins or 6 Jumbo.  If you make jumbo muffins increase oven temperature by 25 degrees and increase baking time by 5 to 10 minutes.

The cinnamon and nutmeg just fill the house with a wonderful aroma. They taste great with a cup of tea.

Here's a Zucchini Bread recipe that I have made into muffins that are really good. You could also just make the smaller loaves for your bakery, instead of muffins.

ZUCCHINI BREAD
3 eggs
1 3/4 c. sugar
1 c. oil (I use regular olive oil, but not EVOO)
3 tsp. vanilla
1 - 2 tbsp. orange rind; optional
3 c. flour
1 tsp. salt
1 tsp. soda
1/4 tsp. baking powder
1 1/2 - 2 tsp. cninnamon
1 c. nuts; chopped; optional
1 c. uncooked raisins; optional
2 c. zucchini; peeled, grated

Grease and lightly flour pans - 2 - 8"x4" loaf pans, or 5 small loaf pans, or 34 muffins.

Mix all ingredients together, stirring by hand. Put in pans and bake 50 - 60 minutes at 325. If making muffins, bake at 325 for 40 minutes.

Nancy, I think the answer is a "technical" one.  Cupcakes are made from a cake batter and mixed like a cake but muffins have a different mixing method.  I think a bit less mixing and most recipes I have seen require a light hand when the dry ingredients are added.
I went to a cooking "textbook" I have and it states that batters for muffins and quick breads are interchangeable.  Most problems arise from over mixing.  This will cause "tunneling" The batter for a muffin or quick bread may be lumpy.
In a muffin batter you do not want to mix so much that you incorporate a lot of air on the contrary with a cake batter you want to incorporate air into the batter.

Good luck with your new business Monica!  From what I've seen in the bakeries, everybody seems to be doing the "bran" or "blueberry" muffins to the point of being overdone.  The pumpkin muffin and buttermilk spice muffins sound great and are in keeping with the fall season.  Personally I think it would be a great idea to use a basic muffin recipe(which you can probably find doing a search on this site) and varying the ingredients to the season.  That way you can change it up quite a bit and maybe promote your business more.

I will look for some muffin recipes and I'm sure we can all come up with additions that fit the seasons.  Hmmmmmm, pumpkin and cranberries might be a good combo for Thanksgiving or peppermint chip muffins for Christmas.

A cupcake usually calls for butter and sugar and the batter is like a cake batter = Cupcake
A muffin usually calls for oil and is a type of bread (quickbread)

Some think a muffin is a confused cupcake!

Nikki is right on.  Cupcakes are just that - cake batter baked in muffin pans.
Muffins are of the quick bread family - baked in muffin pans instead of a bread pan.
Do not overmix muffins or other quick breads.  It toughens them and they may develop tunnels during baking.

Good luck with your bakery.  Customers will soon gravitate to their favorites in your market area.

Just a thought - many recipes sneak a bit of "heat" - chili pepper (chipotle or ceyenne) into a recipe that is unexpected.  Part of a zuchinni  spice or carrot raisin for instance.
If that is the trend in your area, experiment a bit to find just how much to give it that hmmmm? but not the "ouch wheres the water"
