ZUCCHINI BREAD3 eggs1 3/4 c. sugar1 c. oil (I use regular olive oil, but not EVOO)3 tsp. vanilla1 - 2 tbsp. orange rind; optional3 c. flour1 tsp. salt1 tsp. soda1/4 tsp. baking powder1 1/2 - 2 tsp. cninnamon1 c. nuts; chopped; optional1 c. uncooked raisins; optional2 c. zucchini; peeled, gratedGrease and lightly flour pans - 2 - 8"x4" loaf pans, or 5 small loaf pans, or 34 muffins.Mix all ingredients together, stirring by hand. Put in pans and bake 50 - 60 minutes at 325. If making muffins, bake at 325 for 40 minutes.
