Yeah look under libby's pumpkin just click it's in the line up at the tope Very best baking logo in red.
Me all I like are old fashioned pumpkin pies myself .There are recipe and mixes made by libby for pumpkin bread,
alas I am afraid I won't like it like that . There are recipes for pumpkin pancakes I probably wouldn't like those .

Pumpkin cookies with chocolate chips are the best! I couldn't find a recipe here, but they do have a pumpkin muffin recipe with chocolate chips that looks good.

Have you tried adding walnuts,almonds, or pecans. Any nuts you like try adding them. Marshmellows on top.

I just came across a recipe I am going to try this weekend. You have to like gingerbread though.
Pumpkin Gingerbread Pie
1 Cup canned pumpkin
1/3 Cup sugar
1 tsp pumpkin pie spice
1 slightly beaten egg
1/2 Cup half and half or light cream--I may try carnation evaporated milk here, always works for my pies..
1 package, 14.5 ounce gingerbread mix
Whipped cream, optional
Pre heat oven to 350. Coat a 10 inch deep pie plate or an 8X8 baking dish with non stick spray.
In a small mixing bowl combine pumpkin, sugar, pie spice and egg. Beat lightly until combined. Gradually stir in half and half.
Prepare gingerbread mix according to directions. Pour batter into prepared pan. Lightly spoon pumpkin mixture over gingerbread batter; swirl gently using a knife.
Bake for 50 minutes for pie plate or 60 minutes for baking dish, or until a toothpick inserted into gingerbread portion comes out clean.
Cool slightly. Serve warm or at room temperature. With a dollop of whipped cream.

Got this recipe for these bars years ago from an oatmeal promotion... they go over big and are really tasty and are great with vanilla ice cream.

Pumpkin Eater's Bars

Crumb Crust:

1 1/2 c. oatmeal (quick or old-fashioned)
1 1/4 c. flour
3/4 c. packed brown sugar
1/2 c. chopped nuts
1/2 t. salt
1/2 t. baking soda
3/4 c. butter or margarine

Filling:
one 15-16 oz. can pumpkin
2/3 c. milk
1/3 c. packed brown sugar
1 egg
1 Tbl. pumpkin pie spice

For Crust: Combine first six ingredients, add butter, beat at low speed on electric mixer til mixture is crumbly.
Reserve 1 1/2 c. crumbs, press remaining into greased 9x13" pan. Bake in preheated oven (375 degrees) about 10 min.

For Filling: Beat together all ingredients, mix well. Spread over partially baked crust, sprinkle reserved crumb mixture over pumpkin mixture. Continue baking for 25 min.. Cool.. Chill.. Cut into bars

To freeze: Wrap securely: store in freezer 2-3 months. Thaw, wrapped at room temp. 2-3 hours.

Can use greased jelly-roll pan instead of 9x13... bake for approx. 20 minutes.

These are so good and make a great dessert. Hope you like these, we sure do..

Pumpkin-Shrimp Bruschetta

Makes: 20 appetizers

Start to Finish: 35 minutes

Ingredients· 20 fresh or frozen peeled and deveined jumbo shrimp in shells · 1 cup canned pumpkin · 1/2 cup crumbled goat cheese, at room temperature (2 ounces) · 1 tablespoon lemon juice · 1 tablespoon honey · 1 cup arugula · 1/2 cup finely chopped red onion · 1/2 cup toasted pumpkin seeds* · 1/4 cup bottled Italian vinaigrette salad dressing · 20 3/4-inch-thick slices baguette-style French bread · 2 tablespoons olive oil · 2 ounces Parmesan cheese, shaved (optional)

Directions1. Peel and devein shrimp, if desired, leaving tails intact. Rinse shrimp. In a large skillet, cook shrimp in a large amount of boiling water for 2 to 3 minutes or until shrimp are opaque. Drain well. 2. Preheat broiler. In a medium bowl, whisk together pumpkin, goat cheese, lemon juice, and honey; set aside. 3. In a large bowl, combine shrimp, arugula, onion, pumpkin seeds, and salad dressing; set aside. 4. Brush both sides of baguette slices lightly with olive oil. Arrange on a large baking sheet. Broil 3 to 4 inches from the heat about 2 minutes or until toasted, turning bread over once. 5. Spread pumpkin mixture on one side of toasted baguette slices. Top each with a shrimp and some of the arugula mixture. If desired, top each with shaved Parmesan cheese. Makes 20 appetizers.

*Test Kitchen Tip: To toast pumpkin seeds: Place pumpkin seeds in a dry large skillet; cover. Heat over medium heat about 5 minutes or until seeds are toasted, shaking skillet occasionally.

can you freeze leftover pumpkin I am burned out on baking this year and have a little bit of pumpkin filling left and don't fell like baking no more this year....

That bit of pumpkin should freeze well but try this...
Take the pumpkin, add a bit of sugar and some pumpkin pie spice. Cook down until it is real thick. Use as a spread on toast.
Or
Add the pumpkin to a bit of Greek yogurt as a healthy snack or the start of a smoothie. It can be used as a dip for fruit as well if you want it a bit sweeter add some sugar or honey.
Or
Add it to a hot cup of coffee and whiz it up in the blender with some milk and sugar for a pumpkin late. (That will be $4.95 please)

Thanks for the suggestions the one with as a spread sounds real good I might just try that one..... or maybe I will jsus make some muffins and freeze them....

I finally learned my lesson and stocked up on canned pumpkin so as to have it year around. Sometimes I li8ke to make pumpkin bread or muffins in the summer and so this time I will be able to do that as I have extra cans of pumpkin.

Stock up in a few days. Places like Walmart will clear it out. I got some the year before last for something like 25 cents a can. So I had plenty for last year and a bit left for this year.
