Got this recipe for these bars years ago from an oatmeal promotion... they go over big and are really tasty and are great with vanilla ice cream. Pumpkin Eater's Bars Crumb Crust: 1 1/2 c. oatmeal (quick or old-fashioned) 1 1/4 c. flour 3/4 c. packed brown sugar 1/2 c. chopped nuts 1/2 t. salt 1/2 t. baking soda 3/4 c. butter or margarine Filling: one 15-16 oz. can pumpkin 2/3 c. milk 1/3 c. packed brown sugar 1 egg 1 Tbl. pumpkin pie spice For Crust: Combine first six ingredients, add butter, beat at low speed on electric mixer til mixture is crumbly. Reserve 1 1/2 c. crumbs, press remaining into greased 9x13" pan. Bake in preheated oven (375 degrees) about 10 min. For Filling: Beat together all ingredients, mix well. Spread over partially baked crust, sprinkle reserved crumb mixture over pumpkin mixture. Continue baking for 25 min.. Cool.. Chill.. Cut into bars To freeze: Wrap securely: store in freezer 2-3 months. Thaw, wrapped at room temp. 2-3 hours. Can use greased jelly-roll pan instead of 9x13... bake for approx. 20 minutes. These are so good and make a great dessert. Hope you like these, we sure do..
