I recall, many years ago, seeing a pumpkin pie recipie that "made it's own crust". As I recall, it was a one-bowl recipie. It was quite quick and easy. I believe it may have been Bisqui

I recall, many years ago, seeing a pumpkin pie recipie that "made it's own crust". As I recall, it was a one-bowl recipie. It was quite quick and easy. I believe it may have been Bisquik that was added to the mixture, and I almost think it may have been baked in an 11" x 13" glass dish, instead of the traditional pie plate?

It was a real favorite of mine, and I would like to make it again with my god-daughter, so I am hoping that someone may have filed the recipie in one of their recipie boxes.

Many Thanks,

Laura T in California

I made a pretty unusual cake/pie this past weekend (test run for "The Big Day") and it was real good, even my 7 year old grandson declared it a winner and requested it for Thanksgiving.
Gingerbread Pumpkin Pie
1 Cup canned pumpkin. (I made pumpkin butter from the remaining pumpkin)
1/3 Cup sugar
1 tsp pumpkin pie spice
1 slightly beaten egg
1/2 Cup of half and half or light cream. (I used evaporated milk with great success)
1 package, 14.5 ounce size, gingerbread mix
Whipped cream for topping, optional.
Pre heat oven to 350 degrees F.
Coat a 10 inch deep dish pie plate with non stick cooking spray. Or you can use a 8X8 inch baking dish, I used a square pan. Set aside.
In a small mixing bowl combine pumpkin, sugar, pie spice.  Add egg, mix well.  Gradually add in the half and half, mix well.
Prepare gingerbread mix according to package directions.  Pour into prepared pan.  Lightly spoon pumpkin mixture over gingerbread batter; swirl gently using a table knife.
Bake for 50 minutes for pie plate or 60 minutes for baking dish or until a toothpick inserted into gingerbread portion comes out clean.
Cool slightly.
Serve warm or at room temperature.  With or without whipped cream topping.
