DOES ANYONE HAVE A RECIPE FOR MUSTARD EGGS???????

I went to Amish Country in October and had mustard eggs,like pickled beet eggs only with mustard,they were really good wondering if anyone has a recipe? Thank you.

This sounded so interesting I had to check it out. Found a recipe on All Recipes.
6 hard cooked eggs
1/2 tsp dry mustard
1 1/2 tsp cornstarch
1 tsp sugar
1/2 tsp tumeric
2 Cups vinegar

Place eggs in a jar. (peel the eggs)
In a sauce pan add dry ingredients. Add enough of the vinegar to make a paste. Stir till smooth. Add the rest of the vinegar. Heat to boiling. Pour over eggs. Refrigerate. The longer they sit the better they will be.
Pretty sure I got that all correct.

This sounds pretty good. I bet it would make a fantastic egg salad sandwich.

Thanks Nikki,that does sound good.I saw them on the salad bar and sent my son up to bring one back and saw that it was an egg and I tasted it and it was great.This sounds like this may be it,not sure if they used mustard powder or prepared yellow mustard.I'll give it a try thank you again.I do make pickled beet eggs,my mother in laws recipe.She was German and grew up in Pa.All the women in that family were wonderful cooks.Oh by the way your recipe for the peanut butter fudge is awsome,thanks for that also.

I would think using prepared mustard would be fine. I would omit the turmeric and maybe cut back a bit on the vinegar depending on how much mustard you used.

Thanks Nikki,good advise.I'm going to make some tomorrow so they are ready for Christmas.The eggs I had were so good,they must be something new because this was the first time I had seen them at the restaurant.

My son had these & was unimpressed-the vinegar is very overpowering. My deviled eggs, I give a squirt of mustard (whatever brown mustard we have-don't use yellow), just enough to take the mayonnaise edge off & tint the color a little. I tell you - the eggs are devoured quickly!!!

Hi Millie, I went looking on another food site and came up with this recipe 1/2 cup cider vinegar,1/2 cup water ,2/3 cups of sugar or splenda ,pinch of salt, 3 Tabls.of prepared mustard,your choice yellow ,brown and so on. 10 hard boiled eggs. In a sauce pan heat vinegar,water,sugar or splenda,salt and mustard to dissolve sugar.I made 12 eggs and packed them in a one quart mason jar and then poured the hot liquid over the eggs.I will let everyone know how they came out,this is supposed to be from Lancaster Pa.Thank you all for comments and suggestions and thanks Nikki for your recipe post it is much appreciated.The eggs have to marinate for at least one to two days.

To serve these eggs, do you think it's OK to slice them in half? I can't imagine anyone at a church dinner taking a whole egg and figuring out how to eat it. I sure couldn't!!! lol

I think slicing would be the way to go. I would even make deviled eggs with the pickled eggs. I think the flavor would be great. I bet the color would be pretty impressive as well.

Hi Nancy I agree with Nikki,the eggs can be sliced to serve .The marinade is a nice balance between sweet and sour.Nikki I think egg salad would be great also.I would think these could be added to any salad as well.
