Okay, so I made glazed carrots and corn for Thanksgiving and I'm left with a ton of carrots.  I can't find a vegetable anyone enjoys except corn.  I'm looking for something to make for Christmas that people will eat.  Do I just serve corn?  My husband thinks that's all that's needed.  I feel like I need to have more.  On the other hand they loved the Sweet Potato Casserole and took leftovers home!

Winkhi i saw this on Rachel ray. put the carrots in a blander  then put them in the sweet potato casserole. mums the word no one will know

I never have too many left over carrots but I save what I do get in the freezer -- use it in veg soup when I make it.

And I just can't imagine a holiday meal without that corn AND green beans  Wink   Isn't that illegal?

I love green beans in a sweet and sour sauce with crumbled bacon over top.  I found the recipe in the old Betty Crocker cookbook and have been making it ever since.  It is sooo good if you like sweet and sour.

For the left over carrots, I'd have to agree, I think they'd hide out nicely in a sweet potato casserole.

We love carrots cooked with just a touch of butter.

You didn't mention what you glazed the carrots with.  If the glaze rinses off, you could always use the carrots in a stew or mix them with other veggies to serve as a side dish.  However, if they are very sweet you might be able to mash them and use them in a carrot cake.

  Green beans are very good and come in many forms - whole, cut, french, Italian, etc.  They can be served plain, seasoned, or with many sauces.

Smilehi when i have glazed carrots left over i mix them in wipped sweet potatoes some people don't taste it so two vegtables in one

  there are many types of peas that can be "doctored" to be made more palatable.

Hi Susan, 

We enjoy sweet and sour green beans.  The recipe is from an old Betty Crocker cookbook that I had back in the 50ties. 

Fry 2 slices of bacon
Set the bacon aside and cook 1 cup of chopped onions in the fat until yellow
Stir in 1 Tbs flour
Add and bring to a boil .....
     3/4 cup vegetable liquid
     1/4 cup vinegar
     2 Tbs sugar
     1 tsp salt
     1/4 tsp pepper

Stir in ....
     2 cups cooked green beans or wax beans

Stir gently until heated through.  Serve with the crisp bacon sprinkled on top.

Serves 4

I like acorn squash halves filed w/sweet green peas & pearl onions  in butter or  another choice:   French cut green beans w/  toasted almond slivers & butter
.Both are a colorful additions to a festive holiday table and are  very tastey

 H.M.;  Inever have leftover  GLAZED baby carrots.If I ever do?I'll be sure to use them up in a carrot cake as you suggest; TERRIFIC IDEA!!!!!!!!

Thanx for the green bean recipe, oloks  yummy.I'll try it nettime family visits at mealtime.I'll use frozengrenbeans& cokthemright in the liquids, thensprinklew/ pre cooked chopped baconpieces...yummers
