For all the holidays I always make green beans and corn as the vegetables, in addition to salad because I have a brother who is very very fussy.  Doesn't eat many things and these are two vegetables I know that he will eat.  He is the brother who will not eat turkey, chicken, lamb, etc.  Doesn't make it very easy.  So, when I make a turkey for Thanksgiving, I have to make ham for him.  At Easter when I make lamb, I have to make a ham for him.  My other brother won't eat lamb either.  We like lamb.

Roasted asparagus is good.  Simply place the asparagus on a cooky sheet,  drizzle with olive oil or olive oil spray and sprinkle grated
or shredded parmesan cheese.  Bake tor 8-10 minutes at 400 degrees.

I just got a great deal at a local store.  they have Red Peppers for .99 a pound, and when was the last time you saw red peppers for under $1.00?!
I am making a pasta salad for a lunch tomorrow and I purchased 4 peppers.  Roasted all 4 and put 2 1/2 in for the salad and just nibbled on the rest.  SO SO good! Then again it smells like I have had a fire in my kitchen.....

We have veggies nearly every night because they are good for you and they taste good too. I love roasted asparagus, and stuffed zucchini is another favorite. We try to eat a green veggie nearly every night for color and nutrition. I stay away from starchy veggies like corn as they have too many calories!

Some of my favorite vegetables are asparagus, roasted carrots, corn on the cob, broccoli, cauliflower, and so on.
