Today I made  BBQ chicken  with lots of onions & bell peppers (& I tossed in some pineapple pieces so hubby got some fruit) with a side of corn & there is plenty left for him to have as lunch.

While I was making Tue. BBQ chicken dinner, I took some of Sun. roast, gravy, carrots, corn, green beans, added peas, onions, diced tomatoes(canned) & cooked & diced potatoes & made soup. I put some in the freezer & the rest in jars in the frig. so hubby can get a cup of soup when he needs a snack.

Too bad I can not get hubby to eat more fruit. I hope all the veggies I make help.
I usually make a cherry pie for Washington's birthday, but since this year it is also Ash Wed. I will make it for President's Day & my old pie plate takes 2 cans of pie filling (42oz) & he will probably eat the whole pie himself, so he will have some fruit for a few days Laughing.

GRANA here; Hi GALE G My HUBBY IS"picky/fussy but pretty tame compared to yours.Mine" hates casseroles " but l oves lasagna; musaka ( Greek lasagna) pastichio( Greek mac& cheese & traditional mac& cheese.These are all ( technicaly)caseroles but rather than argue; I just make & serve them ; stand back & watch him enjoy ! His Mother's meatloaf was madew/ 2 @ least 2 large hand- grated onions & he hoped for years that II would finally learn to o make meat loaf like hers! I finally made it just like hers& he now prefers my meatloaf pizzazz Hubby  misses theraw sweet onion slices if I neglect to put them in his salads, or provide them w/his burgers or deli sandwiches. I have a theory : these guys think they dislike onions because they observed their Mothers crying whenever  shepeeled & cut them.( guilt feelings, maybe?) ; I use onions in many of my dishes( we restrict salt & flavor must come from somewhere ; BROTHER N LAW refused to eat onion; but his wife'swonderful pot rpoast was made w/ onion soup mix; he loved onion rolls & red onion sllices on his oasted bagel w/ cream cheese. sor t of validates my theory,doesn't it?????????? I use fruits in my baking:
 pineaple upsidedown cake;
 fruit puree; banana ; peaches, berries applesauce , to replace fats or oils  in muffins & cakes; adding berries or chopped/ grated  apple to batter( a painless  & deliicious way to sneak in those fruits to the dietAlso pasta sauce [ tomatoes, peppers,  grated carrots almost do not get
recognized as veggies when served over pasta or on a pizza;[ 1/2 cup.( tomato sauce)  = one serving of veggies]
 diping fruit pieces into chocolate fondue  also works
*****When hot weather  finally arrives[ it's coming, really],try freezing bite sized pieces of ripe fruit for cooling ( out of hand) munching  or use  in smoothies.

When hubby&I wredating, teonly veggies heate weere: canneddicedcarrots; cole slaw & l& t on andwiches
 To him, asaladwasiceberglettuce,apieceof toato & asst meats(chef's salad).
In our nearly 50 yrs of mariage, he has  become  a fruit & veggie lover. A medical condition diasllows hs eating leafy greens( salad greens, spinachn,broccoli; brussels sprouts, .He compensaesw/ more fruits&veggies.Webothlove ve fruits & vegiies even more than meat,poultry & fish.It gets expensive Money mouth this  time of year in my area] I use applesauce& otherfruit puree asa fat substitute & add berries; chopped /shredded fruit to muffins& cakes,Frui t is always availabe on the kitchen  table;
Tonight in adition to the heath bar ice cream & asst.c coookies we enjoyed some fresh ripe sweet juicy stawberries.yum yum.
 top ham steak w/crshed pineaple( 1/2cup pp = 1 fruit)
BBQ sauce( tomatoes, bell pepers & onions is another way to sneak in those  veggies/fruits
pizza /tomato sauce &  cheese, opped w/ grilled/roasted asst veggies( bell peppers, onions, mushrooms, ) is another suggestion!
PB stuffed into celery stickcks
 9 steamed)  babycarrots in a brown sugar-butter glaze spiced up w chili powder to taste; a nice swet& spicy tastetreat!.

 pickledeets( harvardbeets( orange glazed)

 Make pot ofchili; use  chopped celery onions bell peppers; tomato sauce& diced tomatoes;that's  4-5 veggie sevings per cup ofchili plus high fiber ; cholesterol lowering high protein & satisfying/filling  red and/or  black beans.... leftovers freeze& reheat well; can be mashed  for a baked potato topping  or for  nachos  tacos, omelet fillings;enchilladas
 or  easily turned into  a hearty chili bean soup;
Each meal is high in veggies & budget friendly

BTW; if you  consider tomatoes a fruit;  you'll increase your fruit intake as well.
 Serve sweet  fresh fruit  for dessert to help cool off your mouth after that hot & spicy
bowl of yummy!!!!!!!!!!!!

I have put out a bowl of seedless red & green grapes & added grape tomatoes. If small kids are around, they usually are playing & in a hurry to just grab a handful to eat . The grape tomatoes are not juicy like other tomatoes so I do not think the kids know the difference.
  When I pick them (I like to have 3 to 5   plants in the garden) I keep a small container of them on the counter so I can grab a few as I walk by.

I have to have fruit around.
When my Grandson comes back from school he stays with me/us until his parents get home.  He wants fruit so I have been getting all sorts of fruit for him.  I like to get at least 1 thing that he has never had once a month if not more often. (He has been playing a computer game Plants vs. Zombies so eating star fruit was top on the list)
I have to keep a large bag of Red Delicious Apples as well.  They are the only apple my husband will eat and I am trying to get him to eat more healthy things and fewer cookies.  A challenge for me to get him to change. (It was a challenge before the Alzheimer's now it is worse.)

I have been eating(well, drinking) a lot of fruit since last week.  I love fruit but there are some limitations when it comes to making smoothies.  Thank goodness for bananas lol.  Yesterday I made a banana/mango smoothie and added some cinnamon-sugar to it.  Gave it a bit of a different taste.

Will have to try a green smoothie after I buy some baby spinach.  That should be interesting.  Going to be a real challenge to come up with things I can actually eat without being able to chew.

I've been looking for something to keep my potatoes and onions in.My son brought home a store display that was going to be thrown out.The owner told him to take it.It has a metal frame and four wicker baskets one above the other.The bottom basket holds potatoes the next onions and garlic,the next holds fresh fruit,apples,oranges and bananas.The top basket holds my great stainless steel mixing bowls.My son was eating an apple awhile ago.I guess just having the fruit displayed,is more appealing than digging through the fridge,out of sight out of mind.

 Nowthat fruits are lower riced, I ike  to make salads using col BBQ chicken breast in  bite sized  chunks over mixed geens/& topped w/ bite sized ieces of pineapple, orangesegments  or  berries ; sprinkled w/ chopped nuts if desired; There are  so many good bottled dressings available; I have Ihave fun being creative....These  salads in a estaurantcan cost as muchas$10 each. Even using  a pkg ofpre-washed mixed greens; I make 2 or 3 BIG salads or that price
.
 EXAMPLES:
   Top  salad greens w/ PINEAPLEOR ORANGEPIECES; ALMONDS OR PEANUTS;  add  cold  BBQ chicken  pieces and usea botled Asian ginger sesame dressing crush fried Chinese chowmein noodles over the top, if desired
 top  saladgreens w/ grapeor cherry tomatoes, avocado pieces, Mexican cheese shreds, BBQ chicken pieces& servew/ aRANCH DRESSING
top saladsgreens w/Italian cheese shreds , tomato choice & an Italian dressing( balsaic vinegar or creamy, asdesired
 top saladgreens w/ cooked& drained cold corkscrew pasta ( rotini/rotelli) cooked cgarbanzo beans & cold ooked cut green beans servew/ an oldfashioned  French dressingAdd grape tomatp halves forasplashofbright c olor
Substitute cooked  cold  baby redskin ppotato cubes or potato salad  for pasta if sdesired
 top greens w/ washed blueberries& slicedstrawberries, BBQ chicken pieces&serve q/ a raspberry orpomegranate dressing;  as sprinkle of  gtoasted  almonds  make a nice  garnish

make fruit or veg or combination of both juices.carrot, beet,turnip , lime.apple, pinapple,carrot, lime are few combinations.try them in salads.fruit milkshakes are energy givers.have a dash of lime juice in veg juices.and veg salads.they are good source of vitc.skin glows well withfresh fruits and veg

I bought some of the V-8 fusion drinks,not bad.We eat alot of fresh veggies and fruit that has never been a problem in this house.I bought the V-8 fusion because I paid a dollar a piece with coupons.If my kids wouldn't have eaten fruits and veggies I think I would have bought a juicer.

I "discovered" a new to me  fruit today.
I was at Sam's Club and they had "Lemondrop melons"  
Product of the U.S.A. I might add. These are from Martori Farms Scottsdale Az.
These are wonderful.  A light melon flavor sort of like a honeydew but it tastes like lemon juice has  been squeezed over the melon.
I was very surprised at the tangy lemony flavor. 

I like trying new to me  fruits and vegetables this time of year.  Most are in season and fairly inexpensive so it is easy to try something new.
