A home is not a healthy home if there are no fruits and vegetables.  My pantry is stocked with the canned varieties (for Winter) and when they are in season, my fridge runneth over!!

GRANA  here;
When was a child, living inN.Y. C. FRESH produce duce was not grown anywhere nearby; unles you countthedandelions growing in the cracks between the concrete slabs of the sidewalk...... My Mother bought whatever  fresh produce was available @ the green grocer at a premium price. Money mouthFrozen veggies were not available until I was ten years  old&  our old refrigerator had no place to fit frozen food packages.we could fit only one small ice  cube tray & often gave up ice cubes to hold a pkg of frozen veggies or fruit obtained from NewJersey( a long walk  over the George Washington bridge from where we lived), blanched& frozen by my Mom...Otherwise  veggies camein cans & I absolutely hated them all except asparagus tips & tiny green peas.
After I turned 15;  in the summertime, we both worked at a Bungalo colony/ camp.A local farmer  brought his crops to the camp, once  a week on his BIG  flatbed  truck.It was ike a party;picking out fresh fruits veggies for the next few days meals.Smileas employees; he delivered to us last &we got the leftovers/picked overs  that the more affluent  families had rejected .We got a lower bargain price on these leftovers but  it was stil at real treat  as compared  to the city's canned veggies!Smile
The irony of this is that only   generation  or two before; my family owned a farm in NewJersey & ate mostly veggies &   dried beans; chicken & eggs from their own farm. Perhaps the scarcity of fresh produce back then is why to this day I  crave & enjoy fresh fruits& veggies as the mainstay of my diet. Smile

I have fresh fruit and veggies at home all the time.  I've tried the fruit in a bowl on the table, very rarely works with my husband lol.  The only thing he eats usually is bananas(maybe because he looks at them and they start to turn brown lol).  If I plop it on the table and say this is dessert, then he eats it.  Oh well, leaves more for me.  At least he likes veggies.

We have to buy them and then incorporate them into our diets either eaten raw or in our cooking.Everynight I make a salad made with romaine lettuce,baby spinach,celery,cucumber,carrots,green onion and tomatoes.I make the salad dressing with red wine vinegar and olive oil.I cook with a lot of tomatoes,onions and garlic.I also serve cooked veggies with our meals.Fruit in my house is no problem I just have to try to keep it stocked in the fridge and in my pantry along with canned veggies.Don't forget nuts these are a great food.Most of my baking include fruit and nuts.

Hubby tells friends that he does not eat garlic, does not like celery or cranberries.  I use garlic in my sauces for pasta, in chili, home made soup, stroganoff, meatloaf, roast, BBQ pork & chicken . I use celery in tuna salad, potato salad, & stuffing, I have made a few desserts with cranberries & he eats all of these foods. I just try to keep his eyes off my cooking Cool.  It is harder to get him to eat fruit BUT tomatoes are really a fruit so the joke is on him because he likes catsup Sealed.

Hi Fran, I have the same problem with my hubby,I don't tell him what I put in anything because he starts finding fault with it.The only things I don't mess with are the things that trigger a gout attack,which he has.When we were first married I told him I wanted to make ox tail soup,he told me there is no way he's eating the hind end of anything.He said to ask his mom how she made her beef vegetable soup which he loved.So I asked my mom in law how she made her soup and I told her what he had said about ox tails.She got this great big smile on her face and said to me "tell him nothing" Her beef vegetable soup was made with oxtails.lol lol lol!

GRANA here;
Hi GALE GLaughingWinkMy HUBBY IS"picky/fussy but pretty tame compared to yours.Mine" hates casseroles" but l oves lasagna; musaka ( Greek lasagna) pastichio( Greek mac& cheese & traditional mac& cheese.These are all ( technicaly)caseroles but rather than argue; I just make & serve them ; stand back & watch him enjoy!KissHis Mother's meatloaf was madew/ 2 @ least 2 large hand- grated onions & he hoped for years that II would finally learn to o make meat loaf like hers! I finally made it just like hers& he now prefers my meatloaf pizzazzYellFrownLaughing
Hubby  misses theraw sweet onion slices if I neglect to put them in his salads, or provide them w/his burgers or deli sandwiches.
I have a theory: these guys think they dislike onions because they observed their Mothers crying whenever  shepeeled & cut them.( guilt feelings, maybe?)
; I use onions in many of my dishes( we restrict salt & flavor must come from somewhere;
BROTHER N LAW refused to eat onion; but his wife'swonderful pot rpoast was made w/ onion soup mix; he loved onion rolls & red onion sllices on his oasted bagel w/ cream cheese. sor t of validates my theory,doesn't it??????????None of these required a loved one to  handle raw onions!

I have found a new health salad dressing that I make.  I also brush it on veggies to roast.  I take 1/3 part 18 year old balsamic vinegar & 2/3 part Blood Orange EVOO.  This adds a citrus flavor to my salads and veggies from the EVOO and the balsamic vinegar adds the tartness and sweetness.  What this combination does NOT add is salt or sugars.  The EVOO is heart healthy.  It's a win/win!  I enjoy my salads more & hubby will eat the roasted veggies.

We always have apples in our house because my husband eats them every day.  I try to have other fruits on hand, but not always.  My son just starting eating fresh vegetables and I have celery, green peppers and carrots around for him.  He likes them in his lunch.

Lisa K,  That sounds really great. Where do you get the blood orange EVOO?
I think there is an olive oil co. in Temecula that has it, but it was really
expensive! I live in Southern CA so hopefully I can find it cheaper out here.

Lisa I was wondering the same about the blood orange EVOO,Do you make this or buy this.I usually use EVOO and red wine vinegar to make my dressing.I recently tasted a blood orange and very much like the taste.I have a bottle of balsamic vinegar here waiting to do something with it.

From one of the manufacturers I get one of my medications from sent me a picture of a plate that is divided into 3 sections.25% starch,25 % meat and 50% vegetable.I stuck it on my fridge as a reminder and it has helped me to stick to more normal size portions.My hubby and son are both big eaters and I sometimes forget what a normal size portion looks like.lol !
