" outta sight outa mind"( is so true in this situation; If fruits & veggies are ready to eat /& available they are more likely to be eaten & enjoyed.
Remembering how attractive a bowl of brightly colored apples are;I decided to wash &polish dry; enough aples to flll a wicker basket right on the kitchen table...I  was surprised at how often ; on my way to grab something else in the kitchen,I grabbed a bright   & shiney apple instead.
I keep washed & pre-cut raw eggie sticks(crudites)  in the refrigeratorigerator for a quick grab & go snack.
There is usually guacomole or onion dip in covered  bowls there  too.I use  the High protein; fat free Greek yogurt to make my dips, so having veggies & a dip is really a well balanced & healthy snack
If it" spoils"appetites; no harm done, we've already  had protein, calcium  &  veggiesSurprised

I have a bowl of carrots sitting on the kitchen counter all afternoon for snacking. And if that doesn't appease my appetite, I have a V-8!

My Grandson comes over every day and his favorite snacks are fruits and veggies.  I have to keep them on hand for him so it make it easy for me when I get a urge to nibble.
I also keep pretzels on hand that gives me the crunch I sometimes need without the sugar that some crackers and all cookies have.

Our fridge ALWAYS contains two bunches of carrots.  My husband eats them like candy.  I prefer mine cooked.  Love to mash them up and put "Dash" or at least some seasoning on them.  Delisious!!

When serving pork chops or roast pork,I serve either "natural"/unsweetened applesauce or spiced  apple  rings as a side dish.
I top some salads w/ (juice packed
 & rained) pineapple  chunks or Mandarin orange  segments instead  of waxy out of season,overpriced ( wintertime)tomatoes 
 pear slices & crumbled blue cheese are also a nice salad topper.
If  dinner is delayed; I serve a Greek yogurt t dip( guocomole or onion) w/ crudites( raw vegies sticks) .
If it partly fills people up & they eat less meat or starch;  no harm done; they've got good nutrition, painlessly( protein  &  calcium)Cool
When I serve cookies for dessert, I try to always serve a fruit along side of them

cookies are a lways popular; but   I serve  fruits & raw or blanched  veggies assnacks too ; they'll eat less cookies  &  develope a taste (learn to appreciate ) fruits.
Even in winter; oranges, apples some  berries; melon too ) are available( loaded w /vitamins & minerals & so juicy &  sweet it would be a shame to not  make them a part of your daily diet
BTW: washing & cutting fresh fruits is a lot easier than baking  cookies.You can still bake cookies; but will need to less oftenWink

I do the same Ann.Even my dogs like fresh veggies.I think carrots are their favorite.Juliet likes to play with them first then she stands guard over the carrot so Romeo doesn't take it from her and she finally eats it.

using veggies for themain ingredient of a warm & hearty soup is a simple way to getmorevegiesinto yourfamilyat mealtime.This curry flavoredparsnip soup is an " adventure in eating w/ it's uncommon flavors, of parsnips &Indian curry powder.
  

“CHEAP “THRILLS” RECIPES; Washington Post 12-12-2011

  CURRIED PARSNIP SOUP    serves4 [low carb]

In a medium( 2 Qt) saucepan, in one TBS  butter over medium heat, sauté:

1c roughly chopped onion

 1 tsp minced (fresh ginger root

 2 tsp (4-6 cloves) minced garlic;

Cover & cook3 minutes

Add 1TBS curry powder ( your choice of type)

1tsp turmeric

 4 cups chicken or vegetable stock

 4 C peeled diced parsnips(look like white carrots)

4 Cup peeled diced potatoes

Cover& simmer15 minutes

Remove from heat,

Puree in 2 batches till thick& creamy

Return to pot; adjust consistency if needed w/ more stock

Add 2tsp fresh dill or mint (or 1- ½ tsp dry herbs

Heat through & serve in 4 bowls

Top w/ dollop of sourcream  or plain yogurt & 1-2 tsp chopped chives & serve hot

Onions have been used to cure all types of ills from common colds to insomnia and heart disease.

The onion is probably one of the world's oldest cultivated vegetable.

From ancient times to modern times, onions have been reputed to be health giving vegetables.

During the Egyptian civiization, the onion was a symbol of eternity and was fed to the builders of the pyramid(slaves) to give  them  endurance & / strength.

A medium sized onion has only about 40 calories and you get as much vitamin C as one orange.It's a good source of calcium phosphorous, potasium & iron , plus it's rich in fiber

All this and a harvest of flavor as well!

Hi Ann,I have a huge bowl of onions on my counter.I'm not affraid to use them,I go through 5 pounds + a week.if a recipe calls for 1 cup I add 3 cups! lol Sauted onion well carmelized add so much flavor to your dishes.When I make my tomato sauce for pasta I add a lot of sauted onions and it adds a natural sweetness,no need for that little bit of sugar to add sweetness.Green onions in a salad are awesome.

As I read this I am eating lunch..Hummus and baked pita chips.  Just as satisfying as a sandwich and the hummus is so good.  Got a new flavor Rosemary, Olive Oil and Sea Salt. The brand is Sabra.  So I am getting some veggies.  I did measure out the Hummus and I counted out the chips.  If I have hummus left and no chips the rest will go on an apple.

Ann, thanks for the Parsnip soup recipe I love parsnips. Curry is something that I like a lot but never think to make a dish with curry. I think I am the only one that likes it.
The first time I got the kids to try parsnips I took them to the store and told each one to go get something from the produce department that they never tried before and we would make soup.  One came back with parsnips and I told him they were like Albino Carrots.  They do have the same mild, sweet flavor.

We keep a wicker basket o ashed polished dry & shiney aples on thekitchen table; the cookies are squirred away in in my hidey hole.Hubby( the cookie monster ) wl usually  take the easy path& grab an apple or two;an orange if there  as a contrast of color) The cookies are brought out when he really  wants a cookie &not just "something good" to eatKiss

I use onions all the time when I am cooking.  Another idea for pork chops is to sprinkle a little bit of brown sugar on them and then add organge
juice as [part of the liquid.  Very tasty!

I have tried leaving fruit in a bowl in the kitchen and all that happens is they rot! It is very hard to get my husband to eat fresh fruit. I do try to make fruit to eat after dinner. We usually are limited to berries, or poached pears. I guess it should have started as children which is what my daughter has done with my granddaughters who will demolish a bowl of fruit as soon as it is place on the table. Amazing what we learn from our young.

I use a lot of onions, also bell peppers (I have a nice supply in the freezer from the garden). Hubby will eat a banana about once every 3 weeks, other than that I have to find ways to get him to eat more fruit. He is good with the vegs. I cook most days. I put a small salad out for him with any pasta dish I make & he will eat it. In the summer he will eat tomatoes, onions & bell peppers from the garden almost every day because I put out a big bowl of them (I try to change it up a little, slices one day, chunks another, diced with a little dill, another day I sprinkle Italian dressing on). I put a small bowl of pineapple out for him with Mexican food & BBQ, apple sauce with pork chops. When strawberries are on sale, I slice & freeze them in small amounts (enough for him to have 2 hearty servings), some days he will eat plain other days he puts on left over biscuits. When I make a roast, I make green beans, carrots & corn & he will take some of each. Our kids & grandkids have always been good vegetable & fruit eaters.
