CURRIED PARSNIP SOUP serves4 [low carb]
In a medium( 2 Qt) saucepan, in one TBS butter over medium heat, sauté:
1c roughly chopped onion
1 tsp minced (fresh ginger root
2 tsp (4-6 cloves) minced garlic;
Cover & cook3 minutes
Add 1TBS curry powder ( your choice of type)
1tsp turmeric
4 cups chicken or vegetable stock
4 C peeled diced parsnips(look like white carrots)
4 Cup peeled diced potatoes
Cover& simmer15 minutes
Remove from heat,
Puree in 2 batches till thick& creamy
Return to pot; adjust consistency if needed w/ more stock
Add 2tsp fresh dill or mint (or 1- ½ tsp dry herbs
Heat through & serve in 4 bowls
Top w/ dollop of sourcream or plain yogurt & 1-2 tsp chopped chives & serve hot
