Nancy, here is an unusual sounding recipe but one that gets raves anywhere I take it.  I'm sure some folks won't care for the condensed milk and sugar both being in the recipe but it has a great taste.

16 oz elbow macaroni
4 medium carrots, shredded
1 large green pepper, chopped
1 medium red onion, chopped
1 cup mayo
1 can sweetened condensed milk - I use no fat
1/2 cup sugar
1 cup cider vinegar
1 tsp salt
1/2 tsp pepper

Cook macaroni according to package directions; drain and rinse in cold water.  In a large serving bowl, combine the macaroni, carrots, green pepper and onion.

In a small bowl, whisk the mayo, milk, sugar, vinegar, salt and pepper until smooth.  Pour over macaroni mixture and toss to coat.  Cover and refrigerate.  Serves 14.

Nancy, I know this is a big recipe but one you would take to a church picnic or supper.

Bakery -- I need this recipe for  a group of 20 - 30 people..... a very special time after a church meeting Tuesday night.   Never once in my life have I ever made macaroni salad -- or ANY sort of macaroni.

Just for the shapes (not the amounts) I already bought 3 boxes of different shapes of macaroni.  I thought
those different looking shapes would help make it interesting.   And I've been all over the 'nets trying to find something.   Yours sounds so good!  Thank you.

Bakery1 G and Mikki g...both of these sound very good.
Bakery1 not sure I could do the sweetened condensed and the sugar and I have never seen a recipe using sweetened condensed milk but it sort of makes sense because most of the dressing recipes have sugar in them.
Mikki, this pretty much sounds like the recipe I grew up eating.

Nancy let me know what one you used and how it was (and if you made any adjustments).  I got a bag of salad shrimp the other day with the thought of making a macaroni salad so I have this going in the back of my mind.  Just have to get a few more things and I will do that while hubby is at Day Care this week.

When the lovely woman who asked me to make this, I answered, "Huh? " and she told me to just use a bottle of Wishbone Italian salad dressing and some veggies to add color.
I still haven't any idea what I will be doing ........ I did go to Walmart this afternoon to see fresh vegetables.
When can I boil the macaroni?
