In Response to Re: Love to bake:
Dee, I love salads as a meal. I have found if I use fruits on the salad I rarely use a salad dressing as the fruit gives a lot of flavor and moisture without the added calories of the dressing. Baby greens or baby spinach topped with some dried cranberries, diced apples, a few walnuts or almonds and a bit of bleu cheese is a great fall salad. I do the same salad in the summer but I top it with blueberries, raspberries and sometimes sliced strawberries. Any dried fruit will work just keep in mind that dried fruit ounce for ounce has more sugar and calories than fresh fruit. As far as a meal with little fat soups are great this time of year. Bean soup, I happen to be making some for dinner tonight, has lots of fiber and almost no fat if you add no additional meat. If you add chicken that makes it pretty low fat. Vegetable soups are great as well. Best thing is you can control the amount of meat per portion and you can make 1 chicken breast or 1 piece of sausage, ham, beef or what ever you decide to use go a long way. As I mentioned in another post if you check out the "close out section" of the produce area you can even make your soups inexpensive as well as low fat.
