The guy im seeing and I have been cooking dinner every night and the problem is he is a healthy eater and i am very unhealthy so to speak i love chocolates and baking. So i am kind of looking for some recipes that taste good and i would like but that he would like also because it is a healthy meal. Any suggestions?

Here is a chicken dish that I like to make.  You can make it as spicy as you like just use a spicier salsa.
1 boneless skinless chicken breast
1 or 2 peppers, I like red and a green or yellow.
1 onion.
1 jar favorite salsa
Slice chicken breasts into strips about 2 inches long and 1/2 to 1 inch wide, just nice strips.
Slice the peppers and onions into the same size strips.
Sauté the chicken in a little bit of oil, or if you are using a great non stick pan no oil.
Remove the chicken once it has a bit of color on it.  (It will get further cooking)
Add the peppers and onions and sauté until just tender.
Add the chicken back in and pour in 1/2 jar of the salsa.
Turn burner to low or place in oven set at 300 degrees F.

Make rice if you like.
1 Cup rice.
Measure the salsa left in the jar add that and add enough water to make up about 2 1/2 cups. (I find when making this I need a bit more liquid)
Bring salsa and water to a boil add rice and reduce heat and cook for 18 minutes. Turn off heat let sit for about 5 minutes then fluff with a fork.
You could use brown rice it would be healthier cooking time will be longer.
Serve the rice and chicken.

1 Chicken breast will serve 2 very healthy portions or more depending on how many peppers and how large the onion was.

Lately I have been making a roasted Ratatouille. I do this in the oven,
1 or 2 onions
1 eggplant
1 or 2 zucchini
2 tomatoes
mushrooms
Peel eggplant and cube
wedge the onion, I leave the stem attached so it does not fall apart but it really does not matter.
cut tomato into chunks
quarter the mushrooms.
Toss it all on a sheet pan with a rim or use a 13X9 pan, you might have to use 2.
Drizzle with a bit of olive oil sprinkle with salt.
Place in a hot oven, 400-425 turn the vegetables about every 15 minutes.  some may get a bit dark but the flavor is great.
I serve with couscous and shave a bit of Parmesan cheese over the top.
Any leftover I put in a pasta sauce.  I either make the sauce that week or toss the veggies in the freezer to use later.
